Generally speaking, I like wood grips on anything. I had a set of "bonded Ivory" on a Model 58 at one time and thought they looked good on the blue, but they were "too white" for my taste.
On "white" guns, either stainless or Nickel, I like darker grips. Even "goodyears" look good on them, but wood of course is better.
I got this 581 a couple of weeks ago. It had a really ugly set of Hogue's on it, but I was able to find a set of football targets in my "stuff I might use someday" drawer.
