My Grandpaw and my Dad taught me to sharpen a knife by hand using Arkansas stones........I still use that method, but I also use DMT Diamond stones for knives with harder steels. I finish the edge by stropping the blade on an old leather belt that I've rubbed some "Flitz" polishing compound into to get a shaving sharp edge.
