Although I am thinking I should pick up a spyderco sharpmaker now that I know a bit about sharpening knives, and know that I may never become good enough at it to hold the proper angle consistently enough.

That’s actually a Delica 3 you’ve got there, and still a bargain at $3! I’ve got an “accumulation” of all four generations of the Delicas. My Delica 3 has the Combination Edge in the middle of the stack below. I carried mine for years.
