Not wanting to start an argument thread about what constitutes real chili. Beans, no beans, diced meat, ground meat, pork, beef, etc.
Just started a pot this morning with beans from last night. Today's will be ground beef and some chopped chuck. I know a picture of a bowl of chili would just look like a bowl of chili and the pie would look like, well, a pie so I did it this way. I don't want to make the BillHud mistake. Mixed beans. Pintos, Black Beans and Kidneys. A handful of each soaked overnight. Dried Chili peppers and cumin seed ready to be toasted and pulverized. Pulled from the garden this morning herbs, habeneros, cayennes and vegies. Store bought produce. Non-fresh ingredients. Desert. Sweet Potato Pie. And a big rawhide bone I found in the pantry while gathering ingredients and the baby shepherds "victory lap" as we call it. Actually a bragging prance. I know I'll pay for this tomorrow. I predict a "ring of fire" in your future.
I tried a bean variety pack once, they don't all cook at the same rate. I cook beans in a pressure cooker, boil for one minute let stand one hour, then pressure cook 20 minutes. |

Those who have not tried it, should at least try "Cincinnati Chili". It is finely ground beef with chili sauce covered in ground cheese served over pasta with optional beans, onions and "hot sauce". They make some fine chili dogs in Cincinnati too out of the same stuff. If you are in the area try Skyline Chili. FWIW

Mmmm, Mmm...Home made chili and sweet potato pie!...How about an invite for dinner??? I'm just up the road in Virginia. It won't take me too long to get to your neck of the woods. I like dogs too...but not in the chili...

These guys work well for me, but remember to remove the shell.
Armadillo Chili Ingredients: 1/2 lb Bacon, finely chopped 2 tb Vegetable oil 3 lb Armadillo 2 lg Yellow onions, peeled and -chopped 8 lg Garlic cloves, chopped 1/3 c Chili powder 3 tb Ground cumin 1 1/2 tb Dried Mexican oregano 1 ts Cayenne pepper 1 3 oz can green chilis 6 c Chicken stock Salt to taste 2 Or 3 Tablespoons yellow -cormeal (OPTIONAL) as -thickener Now, slap you're Granny! |

I found some Skyline chili in the frozen food section of a Houston Kroger a month or so ago. I thought it was OK, but nothing to write home about. A bit pricey. Had kind of a sweet flavor to it, and a hint of something that seemed out of place. Nutmeg maybe? |

As Ted said, Skyline uses a bit of chocolate. It is no replacement for 5 alarm chili, but it is good for variety, and loses a lot of its appeal if not prepared properly with the sauce, grated cheese, onions and oyster crackers that are not in the frozen box. It is best in the restaurant. ......................................... Back in '03 the winner snuck around and got a sample of everyone else's chili, mixed it up and won the Cook-off. They caught him after they awarded him 1st Place.

Chocolate wasn't the flavor I was picking up, but then again, with all the other flavors in there, that could have been it. |
