Default Hungry? This is the thread for you!

I've developed a new addiction and I'm considering finding a 12-step program to help me stop before I get bigger than the broad side of a barn.

Here's a few dishes I've prepared lately. Feel free to share yours too, please. We can all use new ideas as the holidays approach.

4 Layer Delight

FIRST LAYER:
1 cup flour
1 stick butter, melted
1 ½ cups chopped nuts

SECOND LAYER:
8 oz. cream cheese, softened
1 cup powdered sugar

THIRD LAYER:
2 small pkgs instant chocolate pudding
3 cups milk

FOURTH LAYER:
8 oz. Cool Whip
chopped nuts (optional)

Mix and spread first layer in cake pan. I use an 8x10 pan, but will also work in 13x9 pan. Bake at 300 degrees for 30 minutes. Let cool. Mix and spread second layer over baked first layer. Mix third layer well and spread over second layer. Top with Cool Whip and chopped nuts (if desired). Refrigerate several hours before serving.

Creamed Dried Beef aka SOS

3 jars dried beef
1 stick butter or margarine
1/2 cup all-purpose flour
4 cups milk

Tear (I cut with scissors) dried beef into small pieces and set aside. In saucepan, melt butter over low heat. After completely melted, add flour and mix in with spoon until no lumps show. Add milk and turn heat to high, stirring constantly until it boils. Turn heat back down to medium, stirring constantly, until desired thickness is achieved. Stir in dried beef. Serve over warm toast.
For large crowds, double recipe.

Cinnamon Crumb Cake

Seriously, this is the best boxed mix I've ever tasted. Tastes very much like my husband's grandmother's recipe she made from scratch.

Crockpot Roast and Veggies

No real recipe used here. Just put a chuck roast in the crockpot, liberally shake on Worcestershire Sauce, then liberally apply Lawry's Seasoned Salt. Add enough water to almost cover the meat, and cook on low 8-10 hours. About 5 hours into it I toss in a few cans of new potatoes and a few cans of sliced carrots. You can always use fresh, but I'm the shortcut queen.

Reuben

No real recipe here either, it's just the method I use.

Deli Corned Beef, shaved
Swiss Cheese slices
Thousand Island dressing
Sauerkraut, drained and air dried
Rye bread
Butter

Using two slices of rye bread, spread one side of each slice with Thousand Island dressing. On one slice, layer desired amounts of corned beef, swiss cheese and sauerkraut on top of thousand island. Top with remaining slice of bread, thousand island side down. Spread butter on top slice of bread. Place in oven under broiler until golden brown. Flip sandwich with large spatula then spread this side with butter. Return to broiler until golden brown. Cut in half and enjoy!

Chicken N' Dumplins

4-5 boneless, skinless chicken breasts (or whatever chicken pieces you prefer)
1 family size can cream of chicken soup
4 or 5 chicken bouillon cubes
3-4 cans cheap biscuits
chopped celery and onions (suit to your taste)

Boil chicken in water, bouillon cubes, celery and onions. Remove chicken from water. Save water. Let chicken cool, then tear into small pieces. Flatten out each biscuit and cut into 3 or 4 strips each. Add cream of chicken soup to water you saved and bring to a slow boil. Reduce heat. Add biscuit strips, stirring frequently, until they plump into dumplings. Add chicken, simmer and serve.

EDIT: I was asked about the amount of water. There is no set amount. I just put the chicken in the pot, and it's probably a 6 qt pot, then cover the chicken with water until it's about an inch from the top of the pot.

I had the SOS last night! Had a fried egg on top. That Monte Cristo Fold is certainly a different twist. Where in the world did you come up with that? I'll have to try that along with the Cinnamon Cake.

In my spare time, I browse food and recipe sites. I typically try a recipe the way it's written the first time, then the next time I adjust it to our liking.

Dennis, my Dad was at Parris Island too, and he's the one that taught me to make it.

Fried Chicken Strips

If you don't care for spicey foods, reduce the pepper to 1 teaspoon.

2 cups flour
1 ½ tsp salt
2 tsp pepper
1 tsp garlic powder
1 tsp paprika
3 eggs
2 cups buttermilk

Mix first 5 ingredients in a large dish. Mix egg and buttermilk in another large dish. Cut up 3 or 4 boneless chicken breasts into strips. Dip them in the egg mixture first, let excess drain off, then coat thoroughly in the flour mixture. I repeat this by dipping and coating again.
Deep fry at 350 for 6-7 minutes.

Easy Danish Kringle

Kringle:
1 Pillsbury® refrigerated pie crust (from 15-oz box), softened as directed on box
2/3 cup chopped pecans
1/3 cup packed brown sugar
3 tablespoons butter or margarine, softened (do not use margarine spread)
Water

Glaze:
1/2 cup powdered sugar
1/4 teaspoon vanilla
2 to 3 teaspoons milk
3 tablespoons chopped pecans, if desired

Heat oven to 375°F. Remove pie crust from pouch; place flat on ungreased large cookie sheet. In medium bowl, mix 2/3 cup pecans, the brown sugar and butter. Sprinkle over half of pie crust to within 3/4 inch of edge. Brush edge with water; fold pie crust over filling. Move kringle to center of cookie sheet. Press edge with fork to seal; prick top with fork. Bake 17 to 22 minutes or until golden brown. Cool 5 minutes.

In small bowl, mix powdered sugar, vanilla and enough milk until smooth and desired drizzling consistency. Drizzle over warm kringle. If desired, sprinkle with 3 tablespoons pecans. Cool completely, about 30 minutes. Cut into squares or wedges.

No Boil Lasagna

9 Uncooked lasagna noodles (I use more noodles than this because of the size of my baking dish, so adjust your amount accordingly.
1 lb ground beef
1/2 lb hot pork sausage
3 cups pasta sauce (I use one jar of Ragu or Prego, whichever flavor suits you)
1/2 tsp. dried oregano
1/2 tsp. dried basil
1 3/4 cups water
2 cups ricotta or small curd cottage cheese
2 - 4 cups shredded mozzarella (I use about 4 cups cause I'm a cheese freak, adjust to your preference)
1 cup grated parmesan cheese
2 eggs
1 tsp. salt
1/2 tsp. pepper

1. Preheat oven to 350°F. In large skillet, cook meat until pink is gone. Drain, add sauce, oregano, basil and water and bring to a boil. Set aside.

2. In a bowl, mix together ricotta, half of the mozzarella (I use 2 cups here), parmesan, eggs, parsley, salt and pepper.

3. Spread about 1 1/2 cups sauce over the bottom of 13X9X2" baking dish. Arrange 3 uncooked lasagna noodles lengthwise over sauce. Spread one-half of the cheese filling over lasagna, then another cup or two of sauce, then sprinkle mozzarella over the sauce. Repeat layers of lasagna, cheese filling, sauce and mozzarella. Place last 3 pieces of lasagna and remaining sauce.

4. Cover tightly with foil Bake 45 minutes. Remove foil. Sprinkle on enough mozzarella to cover the top layer. Bake an additional 15 minutes, uncovered. Remove from oven. Let stand 10 minutes before cutting.

Cheesey Tater Tot Bake

2 eggs
1 1/2 cups whole milk
Salt and pepper
2 cups shredded yellow cheddar cheese
2 cups shredded white cheddar cheese
2 pound bag tater tots, thawed

Preheat oven to 350. Grease a 9x13 casserole dish.

In a mixing bowl, whisk eggs and milk together. Add pepper and salt, to your taste. Add 1 cup of yellow cheese, 1 cup white cheese and the tater tots. Mix thoroughly. Pour mixture into prepared pan and sprinkle remaining cheese on top. Bake for 45 minutes, or until top is golden brown.

Variations:
Substitute mozzarella in place of the white cheddar for a different flavor variation. I prefer the mozzarella version.

Add one cup diced ham (or more if you like) to the mixture and use as a main dish.

George Dickel Whiskey Cake

Cake:
1 cup chopped walnuts or pecans
1 pkg. yellow cake mix
5 to 7 oz. instant vanilla pudding mix
1/2 cup cold water
1/2 cup oil
4 eggs
1/2 cup George Dickel Whiskey (I’ve substituted Jack Daniels, Southern Comfort and Crown Royal with success)

Sugar Glaze:
1 stick butter
1/4 cup water
1 cup granulated sugar
1/2 cup George Dickel Whiskey

Preheat oven to 325°. Grease and flour 12 inch Bundt or 10 inch tube pan. Place chopped nuts in bottom of pan. In mixing bowl, blend cake mix, instant pudding, water, oil, eggs and whiskey. Beat for 2 minutes. Pour batter over nuts. Bake approximately 1 hour or until cake top springs back when lightly touched. Let cool and invert onto serving dish, pricking the top of the cake with a toothpick. While cake is cooling, prepare glaze.

Mix butter, water and sugar together in saucepan. Boil 5 minutes, stirring constantly. Remove from heat and add George Dickel Whiskey. Pour glaze slowly over cake, allowing glaze to absorb into cake.

That does it! I'm leaving Mrs. jframe and moving in with you. I hope you don't mind another mouth to feed, as I am a growing 39 year old boy. I do work though, so I can help pay bills.

And it wouldn't be a complete food thread without a plate of sausage gravy and biscuits!!!

Sausage Gravy and Biscuits

1-pound hot sausage (Jimmy Dean is our preference)
1 stick butter or margarine
1/2 cup all-purpose flour
4 cups milk

Brown sausage in skillet; drain. Set aside. In saucepan, melt butter over low heat. After completely melted, add flour and mix in with spoon until no lumps show. Add milk and turn heat to high, stirring constantly until it boils. Turn heat back down to medium or medium-high, add sausage, stirring constantly, until desired thickness is achieved. Serve over warm biscuits.

Tanx, Dixie. I'm cook like you do, browse recipes, try one, if it has promise, change to suit my tastes.

Next time I do Barry's Famous Oven Fried Chicken, I'll pic and post.

OBTW, every recipe I fiddle with becomes "Barry's Famous [insert recipe name]"!

Hey Dix, I'm no southern cook and that looks great, but I always though you needed the fat (grease) from the sausage or bacon to make the gravy....

Hmmm...I'm the cook round here, I may have to try a couple of these dishes on for size (Monte Cristo, Cheesy Tater-tots just to name a couple...and of course the Biscuits n Gravy).

Here's a few dishes I've prepared lately. Feel free to share yours too, please. We can all use new ideas as the holidays approach.

4 Layer Delight

FIRST LAYER:
1 cup flour
1 stick butter, melted
1 ½ cups chopped nuts

SECOND LAYER:
8 oz. cream cheese, softened
1 cup powdered sugar

THIRD LAYER:
2 small pkgs instant chocolate pudding
3 cups milk

FOURTH LAYER:
8 oz. Cool Whip
chopped nuts (optional)

Mix and spread first layer in cake pan. I use an 8x10 pan, but will also work in 13x9 pan. Bake at 300 degrees for 30 minutes. Let cool. Mix and spread second layer over baked first layer. Mix third layer well and spread over second layer. Top with Cool Whip and chopped nuts (if desired). Refrigerate several hours before serving.
Dixie, I've had this before. It is GREAT! I think that the recipe was called "Better than sex cake". Well......

Most people do use the sausage drippings. I never have. I have no rhyme or reason why I don't. I just don't.
