Very simple. Peeled and grated a large baking potato with the medium size star side of a hand grater. It should look like a runny pulp. Grate some onion in too. It takes a while to grate the potato and watch your fingers... hurts like a bugger! Add 1 egg, 2 Tbs. flour, salt, pepper and stir. Double for two people! Makes about 6 thin pancakes per tater.
You need to use a cast iron skillet or SS fry pan (no non-stick teflon stuff). Get it good and hot, add a little butter and bacon fat and spoon in the batter. Thin is good, medium high heat. Don't touch until the edges brown up and you're worried they'll burn. Use a thin metal spatula to peak and then flip. When they come out of the pan, eat ASAP.

Potato pancakes are just about my wife's favorite. I like making them for her, but I hate grating the potatos, so we try to invite the daughter and grandkids over, to make it worthwhile. Usually make a triple recipe, and fry up some smoked sausage to go with it. Everybody has a different idea; my wife likes sour cream, my daughter and granddaughter like butter, my grandson likes applesauce, and I like butter and applesauce.
Guess what we're having for supper Sunday night!
PS I make enough so we don't have to invite Iver.

Looks good. Down here in hillbilly land, we make the potato cakes from left over mashed potatoes from the fridge. It's a heckofalot easier than grating them.

Sometimes simple is good!.....I just finished a dinner of kielbasa and plain white rice (substituted Heinz Chili Sauce for the ketchup).

To simplify your prep time without compromizing taste or texture, try a potato ricer for the spuds & a mini food processor for the onions.
google "potato ricer" & "mini food processor" & "lefse"
Just darn good food!
