Question Armadillo recipes?

I live in southern Missouri and for the last several years there has been a slowly, ever increasing population of armadillos around here. They are not as bad as Iggy's prairie dogs, but they are a pain in the butt when I am mowing. They root out a good sized hole to get to bugs and worms and leave me a nice rock to hit with my mower in exchange. I hate to just whack em and I have heard that they are good to eat, or at least some people do anyway. I have heard that they eat them in Texas and they are tasty if prepared properly. armadillos, not Texans. If you have a recipe I would like to get it before I lose it on them.

We used to eat them when I was growing up in Florida, they were very plentiful, I got to where I could creep up on them and catch them by hand. Or, shoot them with a .22 pistol....

My mother would prepare them like you would rabbit, cut them up and stew them, roast them whole in the oven with potatoes and carrots, fry them, whatever. To me, they tasted like pork.

Exactly, butchd.

I used to eat them years ago here in Florida, then the vets started warning about the leprosy the armadillos carry. I don't care (or know for sure) if it is transferrable to humans or not-ain't eating no more.

When was the last time you saw a leper? I've never seen one.....

Never saw an armadillo with leprosy, either.

I think the "armadillos carrying leprosy" is an old wives tale.

First, they must be tenderized. Best way to do that is hit them with your pickup truck at 70mph. Then, back up and repeat. The ones caught in the fan belt require less preparation.

Afterward, armadillo quiche, armadillo jello or armadillo and cheese omelets are always a treat, especially when you have guests from the city.

"Armidillo with leprosy" tale comes from the scientific fact that Mycobacterium leprae does not grow on laboratory agar media. The only place scientists could get the bacteria to grow was the feet of armidillo. Turns out Armidillo have a low core temp, and live a long time, both conducive for Leprosy growth. It furthur turns out that scientists later discovered that some armidillo also carry Leprosy naturally. So...., handle your armidillo carefully, cook them completely, and wash your hands. Just like Mom used to say, "Handle your armidillo carefully."

Leprosy and Armadillos is no wives tale. No one I know in Texas has ever eaten one. Having seen them up close, there is no way I would ever eat one. They make good pistol targets - maybe the only reason they were placed on this earth.

Well, fear of leprosy wouldn't keep me from enjoying some tasty armadillo meat.

But, since I now live in Virginia and there are no armadillos, I'll have to make do with possum and squirrel.....

A springtime trip across U.S. 60 about 10 years ago saw more dead armadillos than all other road-kill combined. This was about a 300 mile trip. Since then they have only gotten thicker. We have tons of potential meals in southern Missouri.
They even come out on warm winter days. Most activity is at night, but spotlighting is against the rules so its hard to get a shot at them. Average year is usually about 5 killed.
I get a lot of damage to pastures and hay fields.
No recipes available at this location, however.

Can I get an "Amen"? There are some species that are just not made for eatin. At least I hope I'm never that hungry! I remember the first (and last) time I had calamari. I gagged on the first bite. Just knowing what it looked like before it got to my plate was enough for me!

Wow, that does it for me. Ain't eatin' no armadillo meat. Leprosy don't sound too good to me. My dogs won't eat them, they just crush them and leave them lying around the yard. I hate it when my dogs have more common sense than I. But then so does just about everybody I think.

They were unheard of here in Mid-Tennessee untill about 3 years ago. Now I see alot of them that have been ran over.

I have never seen a live one. I wonder how far north they will go.

We used to never see them in the Ozarks. The reason was because of all the natural barriers that prevented them from migrating north, i.e., rivers and streams. These days, they just walk across the bridges like everyone one else as they move north.

We use them for target practice. Certainly not an expert, but I think they migrate or something in the fall. Maybe looking for a hibernation spot because they seem to be more active then. Last year one morning while out squirrel hunting in the fall I kill 17 in about two hours. They are nasty little suckers and when you shoot them with a .22 they squirt blood all over the place, I guess since they have so little hair. All I can say is don't get to close to a wounded one without an exposure suit.

OK, let's think about it....


How many people have you heard thad have DIED (dead, ten toes up) from eating factory prepared Beef, Pork and Chicken, E-Coli, Mad Cow Disease, Salmonella, Trychinosis, etc? Quite a few...

How many people do you know or have heard about that have contracted Leprosy from eating or handling Armadillo?

I'd rather take my chances with wild game over any factory prepared meat when it comes to disease....

I bet Buzzzard is better for you than the average fast food hamburger!

Coupla years ago on a bike trip thru Missouri and Arkansas I was amazed at the amount of Armadillos we saw both dead and alive compared to what we saw there years ago. By chance, we ran across a DNR wildlife biologist on the Peal's Ferry going across Bull Shoals. He explained to us the increase in Armadillos and their march northward was due to global warming. He told us that Armadillos cannot live where the ground freezes solid in the winter cause they will starve to death. With the milder winters and the lack of ground frost farther north than in previous years, the little buggers were expanding their range.

As far as eatin' 'em.........if they taste good and are safe to eat, what's the problem. Snappin' Turtles aren't pretty either and are a pain to clean, but I have no problem eatin' them.

you can rub anything in sage and melted butter and roast it until golden brown and it will taste amazing.

GT Smith: I've got a neighbor that waging war on them right now. He is trapping them in a live trap. He points the door toward the most likely direction of ingress. He than takes two long 2x4s and stands them up on the edge, creating a funnel--\/-- that leads the 'dillos right into the trap. He's caught quite a few that way. Hope this helps!

Armadillos having leprosy was told to me by an old wife-mine. I have eaten them years ago when they were called Hoover hogs around the promised chicken in every pot saying by Herbert Hoover.They can cross water by walking on the bottom and will migrate in large "herds"

I know in East Texas, I've never heard of anyone eating one of them. I'm not eating cockroaches, rats, dog, and I'm not eating any stinkin' armadillo. Besides, they're a state symbol here.

We had a case of leprosy at a Texas Army hospital in the late 1970s. The leprosy was directly traced to cleaning dillos. Not many people in Texas are starving, and not many, that I know of, would eat a dillo. Probably most that would eat them are not from here.

If I was hungry enough, I might consider eating one. I always considered them reserved for the same group that eats possum and carp.

I was a young rookie in 1964 and a fellow rookie was still trapping muskrat
(many hunting and fishing stories the two of us had). One day some one brought in a Herter's "Bull Cook ......" Amazon.com: Bull Cook and Authentic Historical Recipes and…..... cook book and in it was a recipe for muskrat haunches.......tasted like mud. I don't remember armadillo recipes but if any one knew how to cook armadillo it would have been George Herter.

Go to the nearest Steak House and order a steak.

Eat the steak, and forget about eating Armadillo.
