A litle Cajun Humor
Down in Lafourche Parish, Louisiana, Boudreaux gets a job with BP helping with the oil spill cleanup.
He reports for work and is told to speak to a supervisor about his assignment.
He finds the man and asks, "What it is I suppose to do?"
The supervisor tells him to go to the animal shelter and help clean the pelicans.
Two hours later, Boudreaux comes up to the supervisor and says, "Okay. Dey all cleaned. You want me to cook some rice to go wif 'em?"

Cajuns have a history of living off of the land and adapting local sources of food into tasty dishes. Since I moved here in 1973, I have had the pleasure to eat many local foods including alligator, nutria, blackbirds, ducks,Poule D'eau (a local water bird), Purple Gallinule, turtle, and many types of fish. I have heard from local friends that if it moves, it might end up in a pot.

Poule d'eau is actually french for "water chicken". They are vegetation eaters and quite good. People turn their nose at them because they are not a duck, are dumb as flying bricks (and just as easy to shoot) and the limit is 15 but I can tell you that many a "duck" gumbo has been filled out by poule d'eau with people none the wiser. Kinda like the homely girl down the block-not as sexy as Cindy Crawford but fun to be with as long as your buddies don't find out
As far as Pelican goes-the gizzards are really good stewed down with some rice. The rest-not so good.

Purple Gallinule is a water hen bird akin to Common Moorhen now known as Common Gallinule.
