Default Duck soup?

Shot my first duck in about 15 years yesterday, a woodie. Moved around so much while working and raising kids that I just got away from it. Then when the dog passed away it just wasn't as much fun. Anyway I put the boat in the Ohio and rode downstream to a slough I had found. Arrived late as usual. The ducks were flying as I set up. Finally got ready and a flock of six or seven buzzed over at tree top height. I guess reflexes, or what is left of reflexes, kicked in. I threw up the gun, got under the bird as it was a going away at a steep angle and let fly. I rolled the thing! Don't know who was more surprised, me or the duck. Didn't get another shot at a duck all morning. Bluebird day.

Have managed to kill four geese in the early season. Anyone got a good recipe for those things? I fillet the breast and don't do any plucking. Tried some on the grill. Should have used them to resole my boots.

What I've READ is that you can't overcook duck. Think Medium Rare on the grill.

Plenty of recipes out there. Google some up.

Edit: I did the same as you and over grilled mine a couple years ago. Not fit to eat. More like rubber ducky.

Filet Duck breasts on the grill-think rare. Marinate in wishbone zesty eye-talian dressing for a few hours.I wrap a pair with a slice of jalepeno in the middle with a piece of bacon. Cook on the grill until done-think rare like filet mignon. I like to use a lemon-butter-lea&perrins basting sauce . If you want to add some Tony's or whatever go ahead they're yours. DO NOT OVER COOK. I like mine a bit rarer than most people-think red but for everything sacred do not overcook.
If you want-pound them flat and then pan fry them quick in a little butter and make a sammich.
As far as geese, unless it's specklebelly, I give them to the help. For speckebelly-same as above except I'll stuff the breast fillets with the Jalepeno and bacon. Slice them thin crosswise and they make great tasting little medallions.

Hmm, these are Canada geese. I am going to have to come up with a way to cook them or else stop killing them. They are fun to shoot and lord knows there are enough of them. Thanks for the duck recipes.
