Default Bison balls

We picked up a pound of ground Bison yesterday on our way home from a dental appointment.
I had intended to cook some Bison burgers for supper tonght.
My Italian wife came home from work today and had a taste for spaghetti and meatballs. I still wanted Bison. So we decided to make Bison balls. She mixed the Bison with an egg, shredded mozzarella, bits of bread and crunched up crackers. I added rubbed sage and she baked 'em in the oven.
They turned out fantastic, an excellent intermingling of cultures just like me and my wife. I'm a quiet, soft spoken Injun and she's an expressive, outgoing, loud Italian. We make quite the pair.

I like it a a burger and can get the wife to eat it once in awhile...maybe I will sneak some Bison Balls in the next batch of spaghetti

My misses being Italian, me too , she bakes meatballs in the oven that are awesome instead of frying them in olive oil. Bison we have to try it.

We put.

Chopmeat
Egg
Parma cheese
Parsley
Water soaked/squeezed bread
Raisins optional it sweetens the meat.

The bake on a cookie sheet.

Great grandma added pine nuts too but I hated them.

When I saw this I immediately thought of the restaurant just east of Missoula, MT...they serve the REAL thing! Big sign out front!

I think Bison is best as ground meat. It's pretty lean as a steak, kinda needs more fat to flavor it up. Overall good taste though!

We had a roadhouse here that had great bison burgers. I really enjoyed them but they closed the doors suddenly after years of being in business. Someone just re-opened the place and hopefully have those bison burgers too.
A nonprofit group used to have a buffalo roast dinner as a fund raiser since the 1970s which was great too. Unfortunately the membership got old and they too quit a few years back.

We used to take lean ground bison and form a ball around a tab of butter,mash flat and grill it on the barby,Makes a nice juicy burger.

Buffalo (we call 'em buffalo around here, not bison) is good meat if it comes from a cow, a calf or a young bull. The meat of a big, old bull is a whole 'nother deal. Friend of mine killed an old bull with his granddaddy's Sharps rifle and gave us some of the steaks. The flavor wasn't bad but it was the toughest meat I've ever tried to chew - I swear, the more ya chewed it, the bigger it got! Finally ground up what was left and gave it to my Lab. Even she had a hard time time chewin' the hamburger enough to get it down. The whole episode kind of put me off any more buffalo for quite a few years!

The title caught my attention............

Good stuff.

My father liked it in home made Cannelloni with spinach.

We doctored it up a little with spices, since it and Moose tend to be a
little on the blah side for flavor, due to the low fat content......
but a very healthy meat to eat.

LOL, didnt see that coming! There's a cafe between Abilene and San Angelo that specializes in all things buffalo, very good burgers. Don't know about the other offerings.

I've had bison ribs a couple times, they were great. There's a bison ranch in Cheyenne that has a restaurant/Rv park where bison is the specialty.

I cant believe I beat Sip to it but, I have to ask: I had visions--nay NIGHTMARES about this post because, I was wondering if you were going to post different concoctions for: Rocky Mountain Oysters? And no, ive never tried them never will. I do want to try a buffler burger though and heard it was a sweet-tasting meat.

Ted's Montana Grill (as in Ted Turner) features Bison burgers and steaks. Restaurants are located mostly east of the Mississippi.

Publix Grocery chain usually has ground Bison meat. I suspect so does Kroger.

The hybrid Beefalo never caught on. Genetically I think it's hard to produce or rather reproduce.

I've had Bison burgers on several occasions and like them. They are sometimes a bit dry compared to beef burgers, but that's OK with me.

The thread title did remind me of a story.

Back in 2008 we were on Gibson Island in Anne Arundel County, MD. This is a very fancy country club and it was a very fancy wedding.

It was late June, pretty hot, and there was a cocktail hour outside. We were drinking Scotch and making up for the fact that it was a blend by drinking more of it.

There were some college kids that were our waiters and waitresses circulating around with a variety of hors' d' oeuvres.

One young lad was carrying a tray of what looked like meatballs. I took one and asked him if they were in fact meatballs.

"No sir, those a crab balls."

I looked at the tray, and then said, "Gee, I thought they'd be a lot smaller than that."

He laughed and then went off to share the story with his friends.

We didn't have to ask for a drink and the hors' d' oeuvres came to us first for the rest of the day.

Had a buffalo burger at the Czech Festival in Wilson, Kansas. Nothing a couple slices of bacon couldn't fix.

I actually thought this thread might have something to do with testing body armor...

Reminds me of a bar in Buffalo, NY. Years ago (the bar is gone now) they served lamb fries. I had an uncle that took his girlfriend there for dinner. She asked what lamb fries were and he told her (he was quite outspoken) loud enough for the whole place to hear. Don't know if their relationship lasted all that long.

I shot a buffalo in Wyoming several years ago.
I kept the hind quarters and the back straps and tenderloins.
Had all of the hind quarters ground into burger.
That's a lot of burger.
I ended up giving quite a bit away.
It was very good but I can only eat so much ground meat.

A friend raises a few Bison and has given me roasts and steaks.I find it some of the best meat I've ever eaten.Delicious.The secret is eat it RARE.

Have cooked Bison burgers on the grill. It is a leaner meat than chuck so it takes less time.

Being a history and western fan,I would really like to try the tongue and hump,I understand they were prime parts.

The way this thread has turned reminds me of a friend of mine who went to a bullfight. He went to a cafe by the arena and noticed a guy at the next table was bragging up on some rocky mountain oysters or whatever they call them in spanish. He had already ordered so thought he would get some on his next trip. A few weeks later he and his wife went to the bullfights again so this time he went to the same cafe and ordered the rocky mountain oysters. When they showed up he told the waiter, hey! These are a lot smaller than the last time I was here! The waiter shrugged and said, Senior, sometimes the bull wins!

Some things you can do: If you're ever near Rustic, Colorado, they've got a restaurant. No, not two, just one. And one of their house dishes is called "Rusticles". I have no idea what species they were removed from, and don't care. No, I didn't try them then, nor will I now.

And If you ever are on I-70 entering Utah from Colorado, get off at Cisco and drive down Utah 128. At mile marker 14 there's a great motel/resort/restaurant. Its called Red Cliffs. You've seen that stretch of the river when John Wayne rode across it chasing injuns. The menu has all sorts of stuff, including buffalo, elk and other critters. The people we dine there with are pretty adventuresome. I stick to the filet, and don't bother with the elk medallions. I'm too old and grumpy to eat something awful.
