Ive forgotten but--what is the proper name to call this meal? Cornbread thread.

I was wondering what the proper name for this meal is?

Since food is being discussed here and making me hungry for trying something new--or something I havent done in ages.

I was thinking of doing this with my next batch of cornbread. Mixing with the cornbread--a can of corn, mixing two types of grated cheese--probably cheddar and Mozzerella cheese,then mixing some pre-cooked pizza topping meats--like the Spicey Italian and also Hamburger--and baking it with the cornbread and making this a one dish meal.

Ive done the above using biscuit dough,but never in cornbread mix. The biscuit meal was one of the best I ever made--but havent made it for over twenty five years. The biscuit meal--also HAD to have cream gravy to pour over it. Anyway,anyone know what they call this concoction?would it be something like meal loaf???

Just kidding. I remember having something like that back in 60s, but I can't remember what it was called, either.

Almost like sheperd's pie but with cornbread instead of mashed taters on top.

Mexican Cornbread? Sounds tasty, minus the corn, may try this soon. Used to have something similar, put some chili in a dish, add a layer of cheese, then put cornbread mix on top, bake.

I make something similar that I've always heard called cornbread casserole.

Mix up your cornbread batter, add blackeyed peas and chopped ham or bacon . Place in a greased dutch oven and bake. Dad would put sausage and cheese in his cornbread on occasion. My dad was from Arkansas and my mom from Ohio. Mom loved dad dearly and tried to make home cooking for him on occasion, which meant blackeye cornbread and ham. However she always cooked the cornbread in a muffin pan and dad always used a baking pan. I took after dad I guess because I make mine in a cast iron frying pan.

Ruthie and I put cornbread batter, onions, bell peppers, jalapenos and bacon bits in a cast iron skillet. Serve with pinto beans and ham.

Growing up in NE Indiana, I remember eating corn meal mush sliced and fried in butter. We would pour maple syrup on the slices.

Here in the south most of use don't like anything messing with our corn bread and sure don't want corn mixed in anything most times. And yes Florida is in the south and even though the commie states keep sending their old and dieing down here some of us are holding our own.

I've made a "Mexican Cornbread" using red pepper flakes, green peppers, and corn. Bit more savory but still great on butter. Serve it with red-beans and ham pieces or limas and ham.

Fried mush with syrup==now THAT is a red-neck breakfast--along with some good bacon and maybe some scrambled eggs with a good salsa.

Kinda.I had heard of Shepards pie before but never saw any or ate any--untill about three years ago. I liked it well enough. I think id have liked it more had they used roast beef instead of hamburger meat.

Not sure? I think Mex cornbread has jalapeno peppers in it--which I also like. Ive also had some from a local bakery that also adds bellpeppers and such.

Possibly--or even Foodloaf?? I remember that was what we served those inmates who were acting like children throwing temper tantrums.They would get a meal made up of left-overs from the night before--mixed and baked in a dough or cornbread mix. That coule be almost anything too. Could be raisins mixed with green beans,peas,carrrots,somekind of a meat substance--all mixed into the bread or cornbread mix--and made into about eight inch long by about four inch wide--loaves. Sounds sickening but--really aint that bad.Going through training--we had to eat some.

Thats another im going to have to try--buy towards years end. I also have some real Maple syrup--from Vermont that also needs to be used.

Sometimes when im making only a cornbread mix--I do add honey or maple syrup. I like the results--so do a few of my neighbors. Its sweet but not ovely sweat. Also,you can use Caro Syrup too--which to me--has a lighter taste.My grandmother used to make Caro syrup pies

This also reminds me. Ive heard you can use applesauce in place of eggs in a cornbread mix. Ive never tried that before.

Ive had that before and love it. I never knew what it was called? My sister makes this a few times a year. There is or was a Mex restaurant here that served this over enchiladas. I tried that before--and just doesnt go well together.

I havent tried any but--I have seen it with powdered suger on it. They serve this at some Tex Mex places here. They have that and Sopapillias--ill take the sopas anytime.

I've fried the polenta==doesn't taste quite the same but it'll do in a pinch!

BTW: One of my favorite breakfasts was corn meal mush with sugar and milk!

According to the package of cornbread mix I just cooked, Mexican Cornbread it just cornbread with cream corn added. Guess adding the meat makes it something different. But tasty...

Not sure what that is called if it involves cornbread I would sure eat it. We like to mix in cream style corn and green chili, serve with pinto beans, bacon and fried potatoes. Takes a brave man to face a heart attack that way! Good luck with your dinner.

This concoction I never had at home--unless I made it. The first time Iever had this--I was in the hospital with double pneumonia. That was where I also had the biscuit version of it too.

I had a meal one time and ever since I first read the op I have tried to remember the name of it. I can't. So I'm gonna just tell my story and describe the meal and hope some a y'all have had it or heard of it or some how know what it's called.

Back in the mid '70s I was a big time bass fisherman. Had me a bass boat and all. One of my favorite "holes" was a place on Toledo Bend reservoir, formed from the Sabine River which divides Texas and Louisiana.

Our favorite place was on SH 21 just a hop, skip and a jump across the state line. And on SH 21, a little ways before you cross over from Texas To Louisiana you go through a little wide spot in the road called Hemphill, Texas. The original town jail was still standin' the last time I went through there. A tiny little shack make out of mud brick it looked like and was about 10' square IFIRC, certainly no bigger. City limit signs back to back...one stop light...post office, barber shop and general store all in the same building...you get the idea.

Some years ago a famous C&W music star named Conway Twitty owned a cafe there. There was even a small set of bleachers on a small cement pad in the back where he and is some-time singin' partner Loretta Lynn would perform if/when they were in the area. He had long since sold it by the time I discovered it but I always like the food there and stopped for a meal anytime I was in town.

My favorite meal was as follows:
Fresh sweet cornbread baked in a black iron skillet split open and covered with a concoction called "hoppin' John". Hoppin John is blackeyed peas with ground beef, rice, jalapeno pepper, onions and when I cook it, bell pepper and celery. If I want to get fancy I'll cut up a little andouille (cajun sauge pronounce an-doo-ee) and toss it into the mix.

That served on a Texas size platter with a nice green salad and a monster size glass of iced tea.

Now I can cook cornbread. And I can make hoppin John any way you like it. But for some reason I can NOT get that meal to come out as good as I got at Twitty's. Still my version ain't all that bad.

We always used "sweet milk" but invariably made the cornbread with buttermilk.

I grew up drinking buttermilk and loving it. My mother would always ask us before supper, "Sweet or butter?"

WJ, not only have I eaten that, I've eaten THERE. My old Daddy's family was from Hemphill, and I used to visit as a kid. My three uncles and their families were there. (My father left for the war then wound up in Galveston in 47( until Johnny Klevenhagen made him leave!)....one uncle moved on up to Vidor.)

My Aunt lived in Beaumont and made it pretty good.

These post are scary. I guess I can see why the Texans want peppers in the cornbread as they have been rubbing up on Mexico for years. Then you got the Yankees screwing it up other ways but that is not a big surprise just look what they have done to the Northeast and now Florida.
