To add to my previous post, ,I don't do turkey or chicken; to me they both stink when cooking. My son makes deep fried turkey almost every year for Thanksgiving and Christmas but I don't do it either. Now on the other hand I can eat me some ham and, that's what I much prefer; although I do like my wife's cornbread dressing and cranberry sauce. As far as steak she and I both prefer Ribeye over any other cut, she likes hers Med. and I want Med. well.

Half turkey smoked for four hours on Apple and hickory wood. On point. Wife took other half and made turkey and dumplings, on point. Now I'm starving.

Last night my daughter made us some "pumpkin chili". It's made with bison and the pumpkin is used as a thickener. Bison is so low in fat that it just doesn't thicken as it cooks down. You can't taste the pumpkin per se but in concert it works wonders in this recipe.
My chili takes 3 days to make and this stuff takes only about a half an hour. and it blows my chili away. I may never make my chili again because this is the best I've ever tasted.
We use ground bison like we would ground beef; spaghetti sauce, chili-mac, etc. It just...better and better for you.

You should try Butterball brand Turkey Sausage. It's pretty tasty. You get two large links...sort of like Polish sausage. I was forced by medical issues into a low fat diet and began eating stuff like this. Adjusting was tough at first. Said problems are now gone, but I still maintain a healthier diet. It may taste strange at first, but it grows on you. I also began eating Hebrew National 97% fat-free beef franks...also a VERY acquired taste...but after a while you get so used to them that "regular" hot dogs are gooey and disgusting.

My Wife makes Meat Loaf with ground Bison and Bob Evans spicy Sausage.Man is it good.

I actually prefer rare but it's not always easy to get the time right. A little too much and it's over done, slightly not enough and it's still blue raw.
