Leftover Grits
Mrs. Native pulled an extra shift Sunday so I whipped up a late breakfast for her to share when she got home just after noon. A mess of sausage, scrambled eggs and cheese grits. I pulled a small container of poultry broth from the freezer (cup and a half) so I doubled it with water and ended up with 3 cups of grits.
More than I wanted I searched through the stack of Tupperware but since I was rushing a bit to clean up before she showed I dumped it into something that would fit.
I was hoping for something like a small loaf pan so I could slice and fry for a future side. No such luck so now I have a nice pile of semi congealed cheese grits I don't want to waste.
Looking for ideas.
Nuke it?
Add a little warm water and milk and reheat on stove top?
I didn't doctor the grits outside of a little salt and pepper while cooking because I wanted to see how it stood using my homemade broth. It was okay enough but a bit more flavor wouldn't have hurt.
Thanks in advance, I like to use 1x1x1 water, milk and broth for grits but what milk we had was beginning to sour. Since I couldn't use it for the eggs I added a squirt of Ranch dressing to the mix.
Not bad...

I usually cook more grits than I can eat at one meal. I stick the leftovers in the ice box and then reheat the next day or two. I cut it up, add a little water and butter and heat in the microwave. I usually add a little granulated beef bouillon. Other times, just butter, salt and pepper.

Steel cut oatmeal here. Cook a big pot for the week, throw in a couple packages of blueberries. Dip out individual portions, add milk, and nuke in the microwave.

I usually fix my grits with coconut oil.
Makes it a whole lot easier to slide off into the garbage disposal.

White corn meal mush. Don't like mush, cream o wheat, malt o meal on a bowl, on a plate, fried in bacon grease. Corn bread is great with butter and honey. Oatmeal with honey and butter with raisins.

It's hard for me to imagine having leftover grits. Not that they probably wouldn't taste okay, but grits are so cheap, why save them? If you're gonna go to the trouble of reheating them and/or adding stuff to them, why not just cook up a fresh batch?
Ditto for oatmeal or cream of wheat.

If they were regular grits we wouldn't be having this conversation. Poster said they were cheese (and I imagine some other good things in there too) grits and therefore worth a bit of extra effort ot save the cheese. My suggestion is to go with Jimmy's soloution-scramble them up with some eggs. And then, I would spoon a bit of hot Salsa ontop of the whole mess. YUM!

I usually add bits of fried bacon and canadian bacon, just a touch of starch, and put in the ice box, the next day or so I'll take it out pat em into round pattys and fry em up on a cast iron griddle with unsalted french butter.

Put the grits in a bowl. Add two, three eggs, mix with a fork. Mixture should flow slightly. If not add more eggs.
Take mixture and spoon out small dollops onto a hot griddle with oil. Fry until browned and the mixture is held together from egg cooking, flip over, brown the other side.
