Much of it is soy based.
Perfectly safe to eat: it will support life.
It’s just not very tasty!

Well, ya got yer animals, yer minerals, and yer vegetables.
(Personally, I agree with you. I would like a bit more specificity beyond “plant based material.” Could be a chewy sawdust and pine sap bar... Or cedar shavings cereal...)

Plant-based means food that comes only from plants and doesn't include animal ingredients such as meat, milk, eggs, or honey. In addition, it also includes things that are not synthesized, refined, catalyzed, combined with any ingredient not naturally available or created in any manner not strictly found in nature. Some also reject any food that is GMO (genetically-modified), although that is not strictly in the definition. As a term it has taken the place or augmented the word "vegan".

I eat my plant base steer, and plant based piglet, and lamb, and if it is free range chicken. when you think about it they are plant based. also eat green stuff, broccoli cabbage, green beans, stuff like that there.
Notice the ingredients list, there is stuff you can't pronounce. The fewer ingredients the better. I reading the cereal box as a kid, oats sugar, wheat and sugar, puffed rice, My moms shorting read lard.

There was a bread about 40 years back, supposed to be high in
fiber, sure enough, it was found to be wood cellulose supplying
the high fiber. I'm sure termites would have loved it.

I went to a Powwow in Harrisburg, PA one time. I learned that "Vegan" is the Lenni Lenape word for "lousy hunter."

Best explanation, though not strictly non-processed stuff, as tofu and other similar meat replacements are still considered plant-based.
I'm on a plant-based diet, so I eat a lot of plant-based foods. Beyond burgers and sausages are actually really good. Impossible burgers are also good. I don't think I could tell the difference between them and real meat in a blind taste test.
I enjoy tofu if it's prepared well.
Seitan is very tasty, and I like using it in stir-frys. Not recommended if you have any kind of gluten sensitivity/allergy, though, as it's basically processed wheat gluten.
Also, it's not just foods. I've seen plenty of things like household cleaning products that are labeled as "plant-based."
FYI, I use the term "plant-based" to refer to my diet for two reasons. One, I'm not super strict about it. I will occasionally have dairy and/or egg products, and use honey, though I do try to keep animal products to a minimum. While it's been several months since I've had any meat, I wouldn't rule out having some in the future, especially if I'm visiting family and such. And two, "vegan" implies more of a moral/ethical reason for not using animal products, which doesn't apply to me. If y'all wanna have some steak, go for it! If y'all wanna go hunting, go for it! I still prefer leather carry gear. I'll eat vegan food, but I'm not vegan, if that makes sense.
And there's your dose of information that nobody asked for.

There are numerous large companies getting into the synthetic (plant-based) meat business, and it is showing up now at both large grocery chains (including WalMart) and at fast food places like Burger King. I haven't tried any yet, mainly because it is around double the price of old fashioned real animal meat. Nonetheless, it seems to be catching on in a big way, and I am now looking at possible investment opportunities in Vegan foods. My only complaint is that they attach real names to fake food. Oats don't have nipples, so how can you get oat milk? I have nothing against oat drink. Just don't call it milk. Same with vegetable oil based processed cheese-like substance. It isn't cheese because it doesn't contain milk.

I’ve never understood why people who prefer to eat plant-based “food” want it to resemble meat, ie hamburger, meat balls, etc. If the plant-based “food” does not appear appetizing in it’s “natural” form or shape, they can just douse it in ketchup or Tabasco.

I remember the schools serving soyburger hamburgers for school lunches. I thought it was fine and really couldn't tell the difference. It was just adding soy to hamburger so I am sure it was cheaper. This thread made me think of it. I am not sure if anyone else had it, seemed pretty common in the 70's.

The earliest plastics were plant based, and linoleum flooring is made using alpha linoleic acid polymers from linseed oil.
Hey, this "plant based butter" being sold for $4 a pound is just rebranded margarine. Instant 5X the price because so many consumers are ignorant, and some of them are also idiots.

Saw the local White Castle featuring "Chicken rings".
AFAIK, there only one part of the chicken that's shaped like a ring.

Back in the Jimmy Carter administration, inflation increased significantly, including meat prices, and extending hamburger with soy flour additives (soyburgers) became popular to keep prices down. My wife hated soyburger, but I didn't think it tasted much different from pure meat. If you look at the labels of pre-formed frozen hamburger patties sold in supermarkets, you will find that soy is a common ingredient.

Back when I used to lift weights and take protein supplements, I was advised to avoid soy-based protein due to some sort of side effect. I don't remember what it was, I tend to avoid it for that reason.

Pick up any diet bread off the grocery shelf and you'll find cellulose listed as an ingredient. It is an FDA approved food additive for bread, processed cheese, and various products. It is also used in drugs (look for it listed in the inactive ingredients section).

Being "plant based material" at least gives some clue to its origin. I've always been suspicious about the "unknown fiber" listed on a lot of clothing labels.

Notice that all the plant based food is supposed to look and taste like meat?

A lot of the claims against soy products are either misleading or wrong. Here's an article with references to scientific studies debunking those claims:

Too much soy messes with your hormone levels, for both men and women.

If I know in advance, I refuse to eat any chemically adulterated product
made to taste like something it is not.
Years ago one of my customers was involved in developing the BBQ
flavor for the McRib sandwich. The flavor was all produced by these
little yeast, read bacteria. Back in the day these were called plants,
now, Eubacteria.

I'm pretty sure that fine Bourbon whiskey is plant-based. It's nice to muse on that "desirable" feature when sipping straight Bourbon or its offspring - my signature Manhattan.
