The movie “Road House” with Patrick Swayze (of all people to be a tough guy... ha) and Sam Elliott is the ultimate bar fight/dude movie; good stuff!!
And yes, as a scene in a movie the one from Bronx Tale with the bikers is a classic!
Too bad there weren’t any movie cameras around when I was in college, could have starred in several epic bar brawls... . I didn’t start them, but sure did get in the middle of a bunch of them. Looking back now, all I can say is ‘yikes.’

Bar fight scenes usually make for a lesser film. I'm unaware of any "good" bar fight scenes. It seems they're done only to take up production time where the movie folks ran short of better material.

A memorable bar fight in Lonely Are The Brave where Kirk Douglas takes on a one-armed man. Pretty rough.
Another rough one in Treasure of the Sierra Madres when Humphrey Bogart and his partner try to collect their wages.
On the lighter side, there's always the brief but disarming bar scene in the original Star Wars.

It would have been nice to have been a seller of bar furniture in those old western movies. However, one bar fight that I always enjoyed was from a movie "The Big Bus", a spoof on one of those Airplane movies. Anyway, this big bus had a bar inside and 2 guys were arguing, one guy grabs one of those skinny tall milk cartons off the bar, smashed it on the edge of the bar spraying milk everywhere. Someone in the background screams "LOOK OUT, HE HAS A BROKEN MILK CARTON",hohoho

Many of the John Wayne movies have a multi person bar fight in them.
Back in the mid 60s I saw a huge real bar fight, must have been 30 or more going at it. Legal drinking age was 18 then and it was mostly a couple schools settling differences! (Albany High VS SUNY Albany!)

The Mexican bar fight in "Big Jake" between John Wayne and Mr. Sweet. John Wayne lost the fight. One of John Wayne's better Westerns.

When I was young and stupid I worked as a bouncer in a biker bar. I did get into a couple bar fights and saw many others happen without me. Movie fights never look realistic. Nobody takes repeated punches to the face and keeps fighting. From my observation the first one to take a solid shot loses. Get punched in the face and you are bleeding.
Got hit in the back of the head from behind with a pool cue once. It shattered and I got a 3" laceration in my scalp. Grabbed the guy and slammed him into the wall. Wanted to tear his head off but he threw his arms up in front of his face so I gave a hammer fist in the ribs and he dropped. He had two friends grabbing at me from behind but when they saw their buddy go down they got cold feet and ran.
One night an idiot wanted me to go outside with him. Tried to sucker punch me but I leaned back and his knuckles brushed the beard on my chin. I returned with a palm heel strike that laid him out parallel to the sidewalk...4' in the air. He landed flat on his back. Then this cretin pulled himself up on one elbow and told me "Next time I see you, you better have a gun." So I pulled my 1911 and pointed it at the ground between us and said "I got mine, where's yours?" He made a sound like Lurch on the Addams Family and sank back to the pavement.
You deal with a bunch of drunken biker club members and it's hard to find a movie fight exciting or even believable.
Oh yeah. Good times.

Not so much a fight but the standoff between Ringo and Holliday at the card table in "Wyatt Earp".
First the Latin "do what you gotta do" then "tell it to someone who cares" followed by the fancy gun and tin cup handling.

Two I did not see anyone mention. 'The Long Riders' Walter Hill directs. David Carradine squares off against James Remar although this is primarily a knife fight. 'The Ninth Configuration' Stacy Keach destroys entire Biker Gang single handed.

Yes, movie bar fights are carefully choreographed. In the Republic Studios the fight scenes were filmed by undercranking-filmed at a slower speed so they looked faster when played back.
Roy Barcroft, Republic's Villain-in-Chief said the hardest he was ever hit was with a breakaway chair.
