Summer sausage
Now that we are in the home strech for Christmas we are starting to get all sorts of catalogs featuring cheeses,cookies, meat products and of course summer sausage. Regardless of what catalog you will undoutably receive this month it will feature summer sausage. I was fortunate to be the recprient of one of these packages. That same sausage is still in the ice box. No taste whatsoever. I don't care if it's supposed to be garlic flavored or whatever still has no taste. It's only saving grace is the darn thing is still in the fridge since last Christmas. I have a great idea. Since U.S./China relations are in the ******* lets all of us who have summer sausage save them up. And send them all to China yeah that will make them happy or start WWIII. And yes I have one summer sausage residing in my fridge. Frank

For years, I made sausage from elk meat. I looked on the internet for hot, spicy sausage recipes - a big mistake. I tried several tasteless sausage recipes before creating my own. Tasteless, as you describe, is apparently is what most people like.

I make my own , has great flavor . My son says just send him some for xmas as his present , he loves mine that much . My sister and BIL up in MInnesota says the same thing , " just make our xmas present some of your summer sausage , would be fine for bday presents too " . Regards Paul

You should just cut it into little pieces and add it to the mix the next time anybody makes a fruitcake.

I have a few summer sau. logs that I like but I have to admit that a little mustard helps get it down.
It is funny that "Summer" sausage sells big time in the Winter time........
did they get the name right ?

Agree summer sausage is kind of dull. However when I was in school I had a friend that was Jewish and his parents would send him 10 pounds rolls of Kosher salami from Chicago. It had the whole pepper corns in it. He would give me half and I just loved the stuff. I miss the salami more than losing contact with my friend. Never been able to find the equal anywhere however never been in Chicago. Take a lot more than salami to get me to go there.

As I recall, summer denotes the traditional time in which it is made, and target time for consumption was fall/winter. Might be wrong tho...

Give this place a run. Nothing like a chunk of Oberle sausage and garlic cheese. Bunch of good German stock who settled in southeast Missouri because the geography reminded them of home . . .

Many don't really know what hot or spicy is. A meal without at least a little fire is indeed a dull meal.

Actually, given my 30 second research, it’s just the opposite. Named summer sausage because it needs little to no refrigeration, it was originally made in the winter, which is traditional hog butchering time, for consumption in the hot summer months . . .

Muss is right on both of the above statements....these old German farm boys around here know how to make it...but dont ask for them to tell you how....Grandpa taught them

My meat processer makes mine with pork (young feral piglets), jalapeno and cheese. It's wonderful - so much better than the stuff you buy commercially. It's even better after a few beers.
