National Chili Day...
...is today. We here at Chez R&R love chili in all it's many forms.
Tonight the boys and I are having Cincinnati style (Greek) cheese coneys (chili cheese dogs).
So, whether canned, crockpot or carryout, raise your hot sauce bottles and salute this magnificent meat melange.

So I cooked some corn pone and thawed some Chili.
Heres mine, Country Boy Style.
On Cornbread with onions and cheese.
Asian Style Coleslaw on the side.

I just finished off a 6-quart batch I made late last week, and bought ingredients for a second batch as soon as I can get to it. Didn't know about National Chili Day, so I guess I hit it close.
I'm always looking for ways to improve my version, and this latest batch was the best yet. The tomatoes I bought were seasoned just right, with basil, garlic, and oregano -really good stuff in my view. I'm sure there are even better ways to tweak it.

I used to be on the competitive chili circuit. I had a lot of fun putting on a show for the crowds. I got my picture in a lot of Sunday papers too.

FWIW, there is historical evidence that proper chili was invented and sold by the Chili Queens in Alamo Plaza and other plazas in San Antonio, Texas.
Chili is the official dish of Texas, by proclamation of the State Legislature in 1977. Hot Chili is good chili.

Made chili last week, chile colorado the week before and just finished a batch of clam chowder. Time for some fish & chips, spaghetti, and ham and red beans. Potato soup on the horizon (?). Working my way through the freezer in case we can go halibut fishing out of Homer this year (?).

I always figured that Chili was invented on cattle drives. They would have had plenty of beef from the "downers", and probably had easy access to dried chilies to simmer the beef in. That seems to be the main receipt for "real" Texas chili. And beans. Maybe they didn't put beans in the chili, but they served them. I know; I watched "Blazing Saddles"!
I call what I make "Road Kill Chili". If I can't get enough road kill, I substitute Top Round. Mine has tomatoes and beans. Have to use canned green chilis in these parts.
