Ruthie makes a pizza with pesto, roasted garlic, sun-dried tomatoes, mozzarella, asiago and either grilled chicken or shrimp.
It's a crowd pleaser.

Garlic is a main ingredient in many, if not most, dishes in my kitchen. It would be a very bland world without it.
(Hint: I buy American garlic. You would be surprised how much comes from China. Read the country of origin next time you buy.)

Garlic = good! Too much is not an option Years ago, well many years ago, my friends planted 5 whole acres of garlic near Paonia, CO. You could smell the field from a distance ... Anyway, they gave me some for eating and planting. I had a pretty good sized garden at the time. We planted the first year, cropped the tops as recommended, then waited for the harvest in the second year. We got tennis ball sized bulbs of the best ever for several years until I had to leave that house and garden due to divorce. I miss those times, at least some of them.

I hate garlic.
One time when my ex made chili she asked how it tasted. Told her good, but it seemed to be missing something. She laughed and said she ran out of garlic.
When she would make garlic bread, I honestly had to eat in our finished basement. Couldn't stand the smell.

Option
No-one mentioned the mild, delicious, substitute for garlic, called Chives. Our yard had clumps of chives growing in it in the springtime. Those delicious herbs have been eradicated by our lawn care specialists. Most of the Southeast Ohio valley's roadsides are lined with that delicious herb. We cooked these ingredients, in a cast iron butchering kettle, over a campfire to produce bean soup, made with dried baby Lima beans, chives, and cubed, hickory smoked ham. Baked cornbread in a cast iron Dutch oven, in the coals of the campfire. Baked a peach cobbler in another stacked Dutch oven.
After a meal of that type, one might think they had died, and went to heaven!

I make a Garlic & Bologna sandwich.
Onions, tomatoes and garlic are good for the body...
that is what mom and pop told me, and I'm sticking to it.

The bologna that I use for fried bologna sandwiches is garlic bologna.
I'm reminded of a humorous situation. My wife Hezzy, fried garlic bologna sandwiches for her now deceased mom, & dad, and after eating half their sandwiches, they both proclaimed them to be the best bologna sandwiches they'd ever tasted. When we informed them that they were garlic bologna, they immediately laid them aside and wouldn't touch them again.
That proved an old true adage, 'If you don't mind, It don't matter'.

I love cooking with fresh garlic but am too lazy and generally use minced packed in water or garlic powder.
I loved the prison scene in Goodfellas where they shaved the garlic cloves with a razor knife
