Tater salad! Mmmmm!
I don't know about y'all, but every year this Saturday my whole extended family gets together and, weather permitting has a picnic up on one of the mountains around here.
For that, the usual fare is fried chicken, baked beans, green tomato pickles, rolls and gracious helpings of southern tater salad!
I have noticed that there are tremendous differences in tater salad depending upon the part of the country you are from and the type that each person grew up eat'n.
Some people throw in mustard (either dry or wet), peppers, white pepper, black pepper, crushed red pepper, regular pickle relish, sour cream or any of a plethora of ingredients.
I don't care for mustard in it myself at all. Peppers I love, but figure I can add all that myself rather than torment all the other people.
Just brown medium eggs, sweet pickle relish (but it can't have HFCS in it- I'll use my own homemade!) Georgia grown taters, Blue Plate mayonaise and a dash of salt. (I know we can get into a complete thread on the brands of mayonnaise, including these new ones that use olive oil)
I keep it very simple, and there's none ever left- no matter how much I make. (We're a hearty bunch )

I think the only requirement for potato salad is potatos. I don't think I've ever met one I didn't like.

Sweet pickle relish, chopped eggs, oh yeah. And lots of onions! I like a little mustard, with the mayo, sweet red & green peppers are OK, but not essential.
You'd rather have some viniger, instead of mustard? OK, as long as I get my onions, I don't really care

I'm with you. Keep it simple. White taters,SLICED eggs,Hellman's "REAL" Mayonnaise,onions. Salt and pepper to taste,served hot or cold. It's on the menu for Easter Sunday!

Hi Andy, here it is:
-slice your cooked tators
-add pepper,salt and green onion (or sweet onions)
-add warm beefbroth
-mix red wine vinegar and sugar to taste and mustard if you like
-add crumbled bacon
you can add from paperthin sliced cukes , radishes or anything your heart desires. good luck and Happy Easter

My Wife/Aunt's recipe includes the following ing. Potatoes, mustard[ not too much] mayo preferably Hellmans, sugar salt pickle relish red onion bell pepper black pepper paprika celery seed and finely chopped celery Cheyenne pepper(just a pinch) or to taste.

Mt. Olive makes a sugar free sweet relish that works wonderfully well. For a little twist-throw in some sliced green olives along with the onions and relish, and anyone that makes mayo with olive oil ought to be taken out back and shot I'll stick with Blue Plate or Hellmans thank you very moch. Oh and you GOT to add a little yeller mustard to it for that zing.

I thought that too, however some friends of mine that have had cancer try to eat olive oil based stuff whenever they can. That's how I found out they even made it that way!
I don't necessarily believe the regular stuff will kill you, but I'm not going to argue with them...as long as they are the ones eating it and they like it.

I'm headin' out the door right now...
Head'n toward Franklin, NC, and where we had it last year just beyond the big cut in the mountain.
Mrs. Griffith's father was the dynamite man that helped blast that cut. I think it was all those years of rock dust that killed him...
I hope I brought enough.
I'm takin' one of my new .44 HE's with me for...bear protection.

Sounds good. But where's the bacon grease (which is absolutely necessary)? Maybe use that in place of the beef broth?

Don,that was my wife's German style.She says that it's S.German style and the Americans make it like the N.Germans.
Seems like it's always about the N.vs.the S.

my Mom makes it simple,
taters, white, diced
boiled egg, cut up,
Dukes, (the only mayo)
spoon full of relish
a bit of onion,
and mustard to taste,
it's darn tasty, and even better when still warm (from the freshly boiled taters)
