Jole or Jowl
First off I know it is unhealthy but one meal a year I use Jole to season my greens or beans. I went to the nearby market today and found none. I stuck my head through the butcher"s door and asked if they had any smoked "Jole". 6 or 7 youngsters looked at each other dumbfounded. Finally an old fellow came to me with a trey full of Jole that had not been put out yet. Then he told me that they would have known if I had asked for "Jowl". What is said in your area "Jole" or "Jowl"

Spelled "Jowl" and some folks pronounce it "Jole" and some pronounce it to rhyme with "owl."

OK, I'll bite, figuratively speaking, of course ... What is this stuff of which you speak? I'm not sure I really want to know, I already suspect it's some unspeakable abomination not fit for human consumption (no basis for this suspicion, just instinct..), but on the other hand, if it's not good for you, it may have some merit... Intellectual, if not culinary, curiosity compels inquiry.

Betcha it's pig cheeks. I had some, pretty much straight up, in a French restaurant once. I think they'd do better as seasoning for greens.

It's a bacon product that comes from the meat on the side of the pig's face instead of its belly.

Right! And it's spelled jowl, but it's pronounced jole. At least if you got southerner in ya, like me. KY and TN and some French and Indian.
And it's gooood stuff!

We use fatback or streak of lean streak of fat. Either is delicious used as a seasoning or fried crisp. Great heart lubricant also.

So, one might say that this is "high on the hog" bacon? Doesn't sound as bad as I'd feared! Anyone who cooks trout has probably learned that the finest two tidbits on the entire creature are the tiny, oval, "cheeks", well worth the trouble to carefully pick them out with a fork tine. I suppose a less delicate instrument is employed for detaching this "jowl".

I like Yellowtail cheeks, BBQ'd over charcoal, lemon, salt and pepper. It's great because no bones to mess with. Good size, too, so easy to eat. Yum yum!
