Wood target grips/Replace medallions?

Can I get an expert opinion on how to remove and reinstall a set of medallions? I just bought these and the wood is very nice but they have been recleared. I dont want to chip the clear where it is built up around the medallion when pushing them out. Also on the installation of the new medallions are they just peened to the black washer and if so what do you use to back up the face... maybe leather? Please send PM. Thanks
