Which grips would a Model 29 with Serial # S217*** have worn when it left the factory?

Probably diamond magnas or targets.

One picture of the gun shows smooth Rosewood targets with a small football style relief cut. Seller called them Rosewood cokes but I thought all cokes were checkered with the unique checkering outline and diamond around the escutheon.

I think the term "cokes" refers more to the shape of the grip. I have seen some smooth presentation coke grips on guns listed by very knowledgeable sellers.

The stocks shown below are correct for your Model 29 that most likely shipped in 1961. Regarding coke bottle stocks, when first introduced on the 44 Magnum in 1956, the "special oversize stocks made of Goncalo alves", what would become coke bottle stocks to collectors, referred to stocks with a larger area of checkering than the standard diamond target stocks. Over time, some collectors expanded the definition to include any pair of stocks having any degree of palm swell and flare at the bottom. This includes smooth stocks. I stick to the old definition, but to each his own.

Those grips are what I typically think of when I here the word "Cokes". I guess I will see in a week or so if the smooth Rosewoods have the coke shape or not.
