What would be an approximate shipping date of a model 64-5 serial #cal76xx? It appears to be a police trade in, being carried but very few signs of being fired very much.

Likely a late 1995 'production' date, but no way to be sure of its ship (sales or left the factory) date short of a letter of authenticity.
