Guys (and Gals), I recently stumbled into a good deal for a 627-3 performance center revolver with the unfluted cylinder and 2 5/8 barrel. I believe it is what you guys refer to a "blood work" gun. Thing is, it has a JBS prefix and is number 0001. I got into it really well ($800) and was wondering if the serial number added any value and if anyone could tell me how many were made.

If it is indeed the number 1, then yes. and you did get a really good deal.

Welcome to the forum.
The "Bloodwork" gun was initially frame marked "627-PC" which had the old style cylinder stop stud. The 627-3 revision has the new style integral cylinder stop. The first serial number prefix series was HMA. I believe about 300 total were made.
Yours is not the first one produced, but it is the first with the JBS prefix (except for maybe JBS 0000). It's only worth about $2000-$3000.

Bloodwork was a movie starring Clint Eastwood and Jeff Daniels. Clint carried one of these with a fluted cylinder and the guns have developed kind of a cult following. I don't know if S&W ever made them with a fluted cylinder, but it's easy enough to send a gun in and have a second (fluted) cylinder fitted. I think it’s under $300.
Here's one that recently sold on AA (I think cheap). I’ve seen them go as high as 3K. I stumbled upon mine a couple of years ago not knowing what it was and Smithnut and colt_saa filled me in. Congratulations on an excellent find!

S&Wchad: Don't matter, can't swim very well, anyway. I used to carry a 4 inch 29 off duty, so I doubt that the 627 is much heavier. Still, got to find one first.
