Depends on your eyes. I would go for a 1"-2" bull. I would use one of those bright orange stickers to see it better. The 2" sticker at 100 yards would be 2MOA so still pretty small and not a gimme for an entry grade AR with irons.

Depends on your eyes.
I find a 4" black on an 8-1/2"X11" sheet to be convenient and manageable, as a bonus they are cheap to print at home.
I do see a lot of folks using a standard 25 yard pistol bullseye target at 100 that has a black of 5.5" and is perhaps 24" square.
One could highlight the bull or just shoot to the center of the black.
I don't know if you'd call it "cheating", but if your black area is the same visual distance as the front sight post it's a lot easier to center on.

Are you shooting from the bench or off hand? When I qualified in the military we used a 12 inch bull at 200 yards in the off hand position. So, I would say a 6 inch bullseye would be appropriate. Years ago I used a 9 inch paper plate for a target with a 4 inch M29-2. Could hit it six out of six shots.

Try a variety of targets. Whether with open sights, aperture sights, or scope sights, use the smallest aiming point you can clearly see without eyestrain. "Small" can make a big difference in group size. A large aiming point will often contribute to large group sizes. Try it if you have doubts.

Try a 12" black circle and aim at 6 o'clock.
Fire 5.
If the results are okay try a 6" circle.

If you were closer, I would say come on down. But Michigan is a far piece from Florida. I will be shooting a six inch bullseye on Thursday with a Swedish CG-63 (6.5X55 MM) with iron sights.

The black aiming bulls for NRA high power service rifle matches are 13” at 200 yards, 18” at 300, and 36” at 600. They’re designed so that the sight picture looks the same at all distances. There’s an SR-1C target for 100 yard practice that has about a 6.5” aiming bull.

In the Corps we used a 12 inch bull at 200 & 300 yards, at 500 yards we used a 20 inch bull. No matter what they all looked pretty small back then. Nowaday it looks even smaller.
Bottom line is try several different sizes and shoot what you can see.

Boy some of y’all must be gifted with good eyesight lol. When i shoot my Sport 2 at 50 yards i use a 6” or 8” reactive target and just aim for the middle. Using the stock sights or my Holosun. I do pretty well but its not due to seeing the actual small bullseye.
Same method for when i am at 100 yds as there is no way i am seeing even a couple inch bullseye at even that distance. Sad to say.
But just going for the center of a target or zone i can do. Which is fine with me as I use it for a sporting/have some fun rifle and not some long range piece.
