And gluten. Even cheese cubes are often packed with flour to prevent them from sticking. And flour is used as a thickening agent on many sauces. And Burger King put wheat flour on their french fries to help them keep crispy--but I think they stopped that.
Gluten intolerance (Celiac) will explain the gastrointestinal issues, but not the allergy symptoms.
