I always liked the look of the Mustang 2+2 fastbacks. That said, have always been a Chevy guy. Parts are easier to find, and GM offered a lot of different appealing platforms.
Apart from a 1965 GTO in high school, I have owned / restored a couple Camaros, a couple Vettes, and a 1957 2 door Chevy 210 with a 327 / 4 speed.
My last Camaro (pics attached) started out as a 1969 puke green 6 cyl, 3 speed car. When I finished it, it had a 427, modified turbo 400 tranny, and 12 bolt rear. That car was a scary blast to drive...
Nice thing about the older cars is, even though the absolute reliability of the newer cars is not there, they are easy to work on. A small tool box in the trunk, along with some duck tape has got me home many a time where a modern car would have stranded me.
