I would discuss with my insurance company, and ask for either cash value or replacement. Failing that, I would send them to the factory for an original style refinish. I would not change the finish.
My brother went through this in 1982, when his Model 19 was damaged by a water pipe that sprang a leak. He had S&W refinish it and he still has it. It looks great.
