I carry Federal 125 Grain hollowpoints in my 3" M13-2 and my 2 1/2" M66-1. Also in my J-Frames.
I know, I know, I ain't supposed to, but I don't shoot that many in 'em. Just enough to stay proficient.

Speer Gold Dots 135-Short-barrel load in the summer, 158-grain FBI load (SWC-HP) in winter. Once in awhile in summer I'll carry the Magtech all-copper load, it's a 95-grain hollowpoint load. Testing in Wetpack and water jugs has been fairly impressive, and recoil is VERY mild.

My Choice
I carry the Remington 357 Magnum 158 Grain LSWC. I've always found it to be a fine round, though it's not a new JHP, SWCs were good enough for Elmer!
Regards

If I am going to carry my 3" M65 it is usually because I will be hiking in the woods. In that case it will be loaded with Buffalo Bores 180 grain Hard Cast LSWCHP .357 Magnum bullets. For out of the woods situations I load it with BB 158 grain JHP .357 mag's. My feeling is if I feel the need to carry a .357 Magnum it will be loaded with Magnums, otherwise my 2" Chief's Special M60-7 is carried with BB 158 grain .38 Special +P LSWCHP's.

I concur with your observations. I carry the 180gr BB loads in my 4" 686 when in the woods here in WA state. My 357 snub nose carry guns are loaded with THIS.

I think all these are good suggestions. With the three inch barrel keeping the performance up,about any of the good HP loads would be fine for defensive use.

Most SD ammo made today uses a good bullet and they are all reliable. I would suggest finding the ammo that's most accurate in your revolver and go with that.
I shoot either Speer 135gr SB .38 Special +P ammo or the FBI Load in most of my revolvers. One exception is my M640 which is scary accurate with Winchester 145gr Silvertip .357 Magnum ammo so that's what it gets...
