The Colt SAA seems to be a bit more "natural" due to the length and shape of the hammer.

Accuracy is much more important than speed. Take your time getting it out of the holster and get the sights on target before pulling the trigger. Any of them will work fine.... Schofields qualify for style points though.

Interesting question.
I've never shot a Remington, so have no idea.
The Smith single action is slow as hell. At least the Russian is. The grip shape makes it very hard to reach the hammer with the shooting thumb. Shooting it two-handed, I love it, but one handed is extremely slow. You don't have the "thumb don't reach the hammer" problem with the 1881 DA, but it has a long, slow DA pull.
The Bisley hammer is much quicker to get to than anything else, but the grip, in my hand, feels very awkward.
So, with stock guns, of what I've shot, it would be the SAA.
Elmer's Number 5 would be better.

If you are in quick-draw competition, that's one thing...cowboy action is another.
I'd give Bob Munden a call- he does action jobs on SAA's for a not so small fee.

Ever handle a LeMat? I had one of the Navy Arms replicas and even when I managed to get my thumb to reach the hammer (not an easy task), I didn't have the strength to cock it..
Talk about an awkward gun.................

As a SASS member and active competitor I can tell you that the Colt SAA and it's many clones dominate the handgun arena followed closely by Ruger's Vaquero line up. Maybe that would shed some light on your question.

The SAA is quickest from the holster if you do the old gunfighters method of cocking while drawing (1920's gunfighters!). But a miss is 5 seconds==that's a long time. Don't worry about speed. Go for fun.

I shoot rugers--- they take the high volume of fire best. Otherwise I have a uberti 1873 repro that I really like.

I shoot SASS. I own a good variety of Colt SAA's, Colt SAA clones, Remington 1875 clones, S&W topbreak clones, Colt conversion clones, Remington conversion clones, percussion Colt and Remington clones, Ruger Vaqueros, and had a Bisely clone for while.
For me the 4 3/4 and 5 1/2 inch Colt SAA and clones is the fastest and easiest to handle. This includes the Ruger Old Model Vaqueros and especially the New Model Ruger Vaqueros.
The serious competitors shoot either Colt clones or Ruger (Old and New Models) in 4 3/4 or Ruger 4 5/8 inch barrels.
If I was a serious competitor I'd shoot stainless New Model Ruger Vaqueros in .357 with the 4 5/8 barrel.
If you try to call Bob Munden you won't get a connection, he has passed away.

When did he die?
You thinking, maybe, of Joe Bowman?

I kinda like the 1860 army Colts/clones myself, not for speed but I don't think they can be beat for balance and pointability...

If that's true about Bob Munden, my condolences, a truly remarkable man.
I'm no expert, but personally I favor a Peacemaker style grip and Bisley type hammer with something in the 3-3/4" to 4-3/4" barrel length. Better yet is the hammer on the Ruger Montado and with their barrel length, that's what I'd go with.

Alpo,
Bowman and Munden are such similar last names I got them mixed up!!
My apologies for "knocking off" Bob Munden too soon.
Jack the Toad,
The Montado and the Bisely hammers, as you describe have become another "vogue" in SASS, again a lot of top competitors appear to be using them.
