Tapping into the well of knowledge here, 12th century knives
I'm sure some of you have seen the British series Cadfael, a 12th century Crusader (man at arms) who retires to a Benedictine monastery as an herbalist, and solves murders on the side. In a few of the TV episodes and even more of the books he occasionally loans out or carries the fighting knife he carried on the crusades. The only description is "simple but well made and possible blacksmith made. ". There is a ton of information of earlier knives and latter knives, but not much I've found on the 12th. Right now I'm leaning strongly towards the Cold Steel hand and half dagger.

Maybe a bit exotic, but the thesis linked below deals with medieval knife types in use in central German areas in the 12th and 13th centuries, as represented in archaeological finds.
It‘s in German, but there are some illustrations toward the end that give a pretty good idea of blade shapes and handles.

Check out the Etrugul and Osman tv series in Turkey. They are all over the internet. Osman is currently in season 3 and you can see the episodes on youtube; and if you speak turkish you can follow along. The time frame was the middle 12th and early 13th century. Lots of knives, swords and daggers; christian, mongol and turkish.

^^^You may find interesting.
General population would be supplied (if they had arms at all) via blacksmith; higher up the social/power level, castle armory. I am not sure what specific questions you have, but you are on the precipice of many moving parts...history, arms, law, war, legal changes and more.
