I see a number of people shooting the S&W 1911 in my area in SS or L-10 and they seem happy with them.
If you want a double-stack in the same price range, you'll probably want to look at Para Ordnance.

Good morning Gunny,
I have a Kimber SS TLEII and have never had any problems. It is really easy to keep clean in regards to finger prints, etc.

Gunny,
Modern stainless 1911's are only different from carbon steel in their better corrosion resistance properties. Strength is not an issue. Older stainless guns had a problem with galling between slides and frames, but that metallurgical problem has been solved.
One question... How much do you want to spend? $500-$600 gets you a base model, $1000 or so buys un upgraded model with better sights, beavertail grip safety, theoretically better construction, etc. $1500-$2000 gets you a semi-custom pistol from Wilson, Baer, etc.
Whatever you get, I think you'll enjoy it.

Gunny,
The stainless steel guns hold up just as well as the blue steel guns. I've owned Kimber, Springfield Armory, Para-Ordnance, and Colt, in both blue (or coated) steel and stainless. I have a Colt Combat Commander in stainless that is totally reliable and is actually better after thousands of rounds than it was when I first got it.
I don't think it's any easier or more difficult to clean stainless over blue; since I live in the deep (humid) south, I find that the stainless holds up better against the weather and effects of carrying, i.e., perspiration.

There is a Les Baer Thunder Ranch for sale right now in the classifieds for $1500. That is a great gun and a smoking deal.
