Hot Buttered Cornbread

Hey Ole Joe, I think this southern style thing is sinking in over here with us transplants in SC. Last night we got together with two other retired couples from NY and they took us to dinner at the Whistle Stop Café in Travelers Rest SC. Ordered corn bread and fried green tomato appetizers for the table. Good stuff. :D

OK, let me straighten this out for you.
Cornbread is to be unsweetened. It can be cooked in a greased pan, an iron skillet, or even pan fried. All good. And yeah it's also good with some jalapenos cooked in it.

Cornbread with greens

Cornbread with butter beans, field peas, black eyeds

cornbread with milk but much better if it's buttermilk.

Cornbread split, buttered and then covered with blackstrap molasses (as a kid we'd mush up butter and molasses into a kind of whipped spread and use that)

Cornbread split placed on a plate and covered with over easy or sunnyside eggs with a side of bacon, sausage, country ham or liver pudding or mush. Ok, in a pinch scrapple.

And yeah I'm now craving good cornbread.
 
My Mom , raised dirt poor during the depression in East Texas , loved her corn bread , in a bowl , covered with Buttermilk ! Would eat it with a spoon . She said they drank the buttermilk because it was leftover from churning butter and couldn't be sold for much. The butter and fresh sweet milk was sold .
I tried my best but could never develop a taste for buttermilk... my stomach just didn't want to keep it down.... Mom made it look so good . The cornbread.... I still love a good hot pone with real butter !

You guys are KILLING ME here! It's a good hour before lunch and now my tummy is growling and I'm drooling on my keyboard. I guess I'm going to have to go eat lunch at Cracker Barrel now to get my "Cornbread fix". I can't wait until I get home and have to go through all the prep work.

I need cornbread NOW! Might get a bowl of beans & greens to go with it. Dang! Now I'm doing it to MYSELF!
 
Maybe I'll have to try making cornbread in my #14 Griswold cast iron skillet.
Put bacon grease or lard in the bottom of the skillet , put the skillet in the oven to get hot while you mix the batter ...
Pour the batter into the hot grease in the hot skillet ...it should sizzle...
and bake....talk about a fantastic crust and flavor !

I would have married that pretty blonde haired girl but we were both young and she moved on ... I still think fondly of her "Cooking " and other "abilities" .

You had me at "hot buttered" and then when I read "cornbread", I just about swooned! It ain't really hot but once, right after it comes outa the oven and the cast iron skillet it was baked in. Yep, you can sure warm it up so's it'll melt butter, and it's good then, but not quite like it is right outa the oven! But it's always good for cornbread and sweet milk! Well, it is till it's gone .... sigh.
 
I agree, Rusty. Perfect for just this situation, IMO! In fact, Old Joe got my mouth to waterin' with his post, and then I remembered the last piece of the the last cake of cornbread my wifemate put together was sittin' in the fridge waitin' on me to decide to dunk it in milk. That ain't exactly on my diabetic diet, but if you won't tell, I won't either! And I'll eat some protein to kinda balance out the carbs and it'll be OK. Actually, I'm just now cleanin' the bowl of that fine stuff. And, yep, it was dee-licious! Maybe now my all time favorite gurl will make up another skillet full for us. Dibs on the first piece outa the skillet!
 
The wife made butter beans with ham cubes in it and cornbread a couple of weeks back. Hadn't had it for years and man did it hit the spot! Crumbling some up over the beans was real comfort food.

When I was a kid my mom would have the beans on the stove when we came back from rabbit / pheasant hunting. We would be half frozen and worn out. She would toss in the cornbread while we cleaned whatever we got then we would fill our bellies and fall asleep in front of the tv watching football.
