Pancakes
Kramer, Galco, Rosen, Rosen...
(Dang it! Forgot to include my Simply Rugged Sourdough.)
I like pancakes with a good gunbelt. I think with a pancake, the cylinder is typically above the belt, and a good belt — above is an old Rosen — is needed to hold the holster/gun securely and comfortably.

How about a Tortilla?
Had to edit to thank everyone for the likes. Took a quick look, and besides the 3" K frame holster shown, I have the same model holster from EPS for a Colt Commander, Glock 19, and a Ruger Standard Auto .22.

Like the pancakes. I carried my 64 2" in one for many years. It was made by a fellow cop on the force back in the 1970's. Bottom was open so you could carry your 4" Model 10 duty revolver if needed. Still going strong.

I have a short stack of pancakes.
From left to right:
DeSantis 82 for S&W x69 and square guard 6904/6906.
DeSantis 002-83 for S&W round guard 59/x59/69xx/59xx.
Gould & Goodrich B29L - 39 for S&W square guard x59/x69/590x, my first pancake.
Gould & Goodrich B29L- 645 For S&W 645.
Hmmmm, there seems to be a pattern with my pancakes.

I bought this when I lived in Alabama many decades ago. I didn’t know who Thad Rybka was but I liked this holster.
The TR is faint, it’s just to the right of the stitching on the right side.

I'm a Kramer Horsehide Leather fan myself and have been for many years. I've got a bunch of his holsters, belts, pouches and cartridge carriers. I wouldn't think of using anything else for a CCW/EDC. With minimal care, they last pretty much forever and I've never had one wear out or stretch out.

The pancake design is generally credited to Roy Baker, although there is some truth to the saying that there really isn't anything new under the sun. Particularly true in the holster world, where there is some innovation from time to time and a whole lot of jumping on the band wagon.
What Roy Baker really accomplished was as much an innovation in marketing as in holster design. Retail display racks of Roy's Original Pancakes appeared in gun stores across the country, provided under a "floor plan" system allowing retailers to stock up with a good selection and pay off the bill in installments over time as the products sold and generated cash flow.
Safariland, Bianchi, Don Hume, G&G, and most other popular manufacturers brought out their own competing lines with some including unique features.
Most of Roy's original line consisted of the "one size fits several" approach that was common during the period prior to the 1980s or so. Sized for Large Revolver 4", Small Revolver 2", Large Automatic, Small Automatic, etc.
Truly excellent products coupled with a great marketing plan. The company had a great run for many years, but unfortunately did not survive for long after the passing of Roy Baker.

This Simply Rugged has been home to a Pre27 3 1/2" and a Mod 24-3 3" and did a fine job.
This Lobo Gunleather has taken care of all of my 2" K Frames at one time or another.

Lobo, many of the Roy's Pancakes I have shown were marked on the rear for specific gun models. For example the Python holster, the one for the S&W Model 539 was marked for a Model 39 and the one for my Mauser HSc is marked for a Walther PP but fits fine.
There was a uniform shop in my town that supplied police, fire and forest service uniforms and equipment and they always had a large selection of Roy's holsters on a rack like you described. I bought several there back in the late 70's and '80's.
