Cucumbers, onions and vinegar
In the summer my dad always kept a bowl of sliced onions and sliced garden cucumbers in a water and vinegar mix sittin in the fridge. I fixed a bowl a few weeks ago and my wife hadn't heard of this. I always thought is was kind of a normal thing to have around. My grandparents made it and since we also had it at home I guess that made it a global dish in my mind...  good memories.
Anybody else do this? I remember he would add ice cubes if it was right from the garden to cool it quick and have it ready in time for the supper table. Cold and crunchy. It's been a nice treat the last week or two and just fixed up another batch.

Mix in a little olive oil and salt & pepper. Always the starter course in my Italian Grandmothers table in the hot months.

That's one of...
...my wife's and mine favorites.
We use white vinegar, and add just a little sugar to the mix. They sure taste good.
I've been eating those since I was old enough to remember. My grandmother got me started on them.

We use to have them on occasion.
My wife makes a concoction with red onions, cucumbers, miracle whip, white vineagar, sugar, and a little bit of dill weed.
I have a hard time not eating the whole bowl full at a time. She doesn't like the stuff and makes it under protest. She only makes it once in a while and just cuz she woves me...
It does however, help me in those times when I want some solitude. She gives me a lot of space after I have consumed a bunch of them goodies.

Yep...cukes, onion and vinegar......and ice cubes too. Another is cukes, onions and sour cream.....just had some a little while ago with my dinner.

Used to go to church with a girl that wouild whip up a bowl of cucumbers, onions, and tomatoes and dump a bottle of Italian salad dressing in it for our fellowship meals after our monthly singings. Her husband said nobody would eat that mess but I love it.

My dad craved it all the time. Belive he put sour cream on his. My aunt makes a good version of it when I get home, but I never asked her recipi. My wife never had it untill we went home and aunt made some, my wife went wild over it.

My wife has been serving cucumbers that way for the last 40 years.
Sometimes, in lieu of a salad, we'll just slice cucumbers and tomatos and pour a light Italian dressing over them.

Yep, a seasonal thing here too! I pick 5 gal buckets at a time....gotta love my fridge pickels. Love the gardens.

Heck yea!!!!!!!!!! Been doing it all my life. I like to add Creole Tomatoes to the mis as well. Anither good one is beets and onions in vinegar-pretty tasty

I never realized this was popular, being of German decent we always had "gurkensalat".
Our way was, is, thin sliced cucumbers, thin as can be (we use that metal slicer thing that grates on the other side what do you call it?) Then just white vinegar, water, ground pepper and some salt onions are optional ( I like some). Let it marinate overnight
We were supposed to make some yesterday, but somehow we forgot....

If you want to make that south pacific style just add Kikoman soy sauce to it. Gives it a little more flavor

My Grand mother and my Mom used to put sliced cucumbers in fresh cows cream in a little china bowl on the table in the summer for dinner. I know it sounds strange but it sure is good. I haven't talked to very many folks who have done them this way but there are quite a few around these parts that still do. Me for one.

We always had it as a kid. My mom probably got it from my dad's mother=German and a Quaker==a couple of generations from Pennsylvania.. Grandpa was Dutch. He and she had worked as cooks in a lumber camp,
My wife asked me to make some last night with our very first cucumber from our garden. I used red wine vinegar.
I also grow dill weed (well, it went wild two years ago) and I'll chop it up and soak it in the vinegar with a little garlic for a couple of weeks and then make the pickles.
Also, use white or yellow onion with a little chopped ginger and really thin sliced cukes. Add a little sugar.
Another variation is to use red onions.
Or, de-vein and de-seed jalapenos and pickle in the dill vinegar. Can also use carrots or ASPARAGUS! I have people wanting the asparagus recipe all the time.
It's about 5:20=gonna go make some to go with leftover tri-tip tonight!

Hi you guys, this the worst comp. to type on, I hate my husbands laptop.
but by the way I am from Bavaria and everybody loves my "Gurkensalat" here we go
Cukes (europeans) paper thin sliced, add salt not too much and let stand for 20 min. take the water out, add a lots of Dill, pepper, a little bit of sugar, a little olive oil and red wine vinegar. add heavy cream at the end. taste and add to taste.
Voila there it is

Love cukes and onions in vinegar with some sea salt. Plate them with some garden fresh tomato's and rye bread and butter on the side. Now that is a meal to kill for.

Try cukes, onions, red wine vinegar and tomato with about a 1/2" thick slice of FRESH mozzarella on a saltine cracker. Got my mouth watering just thinking about it.
I've got to admit the suggestion of soy sauce sounds mighty tempting. Although teriyaki sauce sounds even better.

The wife makes it with a mixture of purple onions and vedallia onions with cukes a little sugar and red wine vinegar. Sure is good, I think I may try the jalepeno idea too.

Went through the kitchen in the prison one day. The inmate cook was standing over a pot, that looked like a 55 gallon drum, of the stuff pouring a 50 pound bag of sugar in the mix. I told the Kitchen Supervisor I gained 10 pounds just walking by. He chuckled and said that's the way they want it, that's the way they get it.
As much as I like it I never did get up the courage to try theirs.

Basic and delicious:
3 - 4 cukes, peeled and sliced
1/2 - 1 sweet onion, sliced thin
1/2 water, 1/2 white vinegar, enough to cover
Sprinkling of dill
Ready to eat in 2 hours, no refrigeration needed.

Growing up my grandmother made cucumbers and onions in sour creme, a healthy dose of fresh ground black pepper garnished the top. Great summertime dish, always served cold right from the fridge, there were never any leftovers.
