I like light stocks on dark guns and dark stocks on guns that throw back a lot of light.
Here are some ebony Kuracs on my 629-6. (I know, I post this pic a lot. But I really do like the look of this combo.)

I've got smooth Secret Service grips made by Eagle Grips in Gabon ebony on my 638, and I really love the black wood on the stainless gun.

for a stainless steel revolver or semi auto I prefer the elk horn grips with at least 60% bark.

Not sure what's the best color though. I'd say that depends on the purpose. If you wanna support breast cancer awareness you might wanna go pink? j/k
I think some fancy walnut looks just fine. Or Bocote. Or Ebony, Macassar. Possibilities are endless, too much nice wood out there. I also like snakewood and desert ironwood.

I like these and I don't know what they are. S&W Combat grips.
I couldn't stand the Uncle Mikes that were supplied with the gun.

Rosewood and Walnut, by Spegel. Note that the hard kickers have smooth grips, the 22's grips are checkered.

Not the nicest looking but I can not find a way to improve the feel or function.

For some reason all my nickel s&w have darker wood stocks. I prefer Rosewood.

I like the redder woods. I have a cocobolo Hogue on my 681. Rosewood looks nice, too.

To me ebony and darker colored woods look the best on stainless guns while ivory and lighter colored woods look good on blued steel. I guess its the nature of the contrast. Not everyone thinks the same though. I think it also depends on the gun. I think though that sometimes a darker or medium color of wood does look ok.
This was my 649 with Ahrends Bubinga grips
Here are some Grashorn stags on my 649 I used to own.
Here's a set of Grashorns on a 5-inch Model 27 I once owned. Kind of wish I still had that gun.
