Talking Philly Cheese Steak, What's your cheese?

OK, let the debates begin!

I just made some, Mrs Rule and I prefer fresh Mozzarella or Provolone. None of that cheddar or Wiz stuff. I guess Wiz is "authentic" and I like Cheddar, just not on meat. Yes, onions, peppers and shrooms and grilled steak.

So what's your choice?

Two vastly different Philadelphias! Philly cream cheese is named for the delicacy from Philadelphia New York!

Personally, I'll take my cheese steak with American, lettuce, tomatoes, both raw and fried onions, with a trace (teaspoon?) of chopped hot peppers fried with the onions!

That's just about the bottom possible 'cheese' you can buy!
I'll go with just about any other cheese available!

"As of 2016, Kraft describes Cheez Whiz as a "cheese dip" with the word "cheese" spelled correctly. The ingredients list contains "cheese culture" but does not, according to Kraft, actually contain any "cheese""

You want a Philly cheese steak? Come here I'll take you out to one.....my treat! Then you can compare! Word of caution....don't ask for weird cheese! Actually, the first and only time I have ever had a "Philly Cheese Steak" was at the Harley-Davidson Factory Cafeteria in Milwaukee, Wisconsin in 1983 while attending a Service School.

It was sliced beef on a hoagy roll with sauteed onions and Philadelphia Cream Cheese.

It was delicious and I've never forgotten it!

Hoagie is also a Philadelphia term. No one knows exactly how it started but the common accepted story is that in 1953 Italian vendor got the idea of putting thin sliced deli meat and cheese along with veggies on to a long roll and sold it workers in a WW1 era ship yard on what was then know as "Hog" island, today the site of Philadelphia international airport....and no longer an island

 Another explanation is that the word "hoagie" arose in the late 19th to early 20th century, among the Italian community in South Philadelphia, when "on the hoke" was a slang term used to describe a destitute person. Deli owners would give away scraps of cheeses and meats in an Italian bread-roll known as a "hokie", but the Italian immigrants pronounced it "hoagie"

I have very limited knowledge of Philly Cheese Steak sandwiches, as I don't remember ever getting one in a restaurant or deli. But we do occasionally fix sliced roast beef on sub rolls at home using Velveeta along with horseradish sauce and Grey Poupon mustard. Melted Velveeta (in the microwave) seems fine to me. Sounds like they might be somewhat like the Earl of Sandwich chain's roast beef (the Original) sandwich. Those are pretty good with Cheddar, but I think they have other cheeses available.

We tried a new restaurant (actually a sports bar) in town last week that supposedly serves original Buffalo hot wings and roast beef on kummelweck, another sandwich, but indigenous to the Buffalo and western NY area. Kummelweck is basically a large round roll, fairly firm, that contains caraway seeds and has salt crystals baked on the top. The sandwich is usually served with about the hottest horseradish sauce available. But no cheese. My wife is a Buffalo native and is an expert on the subject of "Beef on 'Weck," and I've had many of them myself, but not nearly as many as she has. Anyway, the local attempt at duplicating the real thing wasn't too successful (especially the rolls - too soft, and the beef was sliced too thick and undercooked, almost rare). The sandwiches were also far too expensive ($12). My wife gave them some advice about how they should be made (she's good at giving advice), but they weren't very interested in her opinion. Maybe things have changed in Buffalo.

Just about anything but the OP has my favorite down pat.
There's a local place, Mile High over on Dixie.
They bake their own rolls and will use brisket.

Mrs Rule is a gen u wine "CheeseHead" I am a part time one.

I do not consider "American" a cheese, it reminds me of some school lunch. As for Whiz, no way I eat that artificial stuff. yuck.

Back in the Iron Age when I was in college, I had a roommate who was addicted to Cheez Whiz. He basically lived on it, spread on crackers. At that time it came in (I think) 12 ounce glasses with a snap lid. We had a huge number of those empty glasses. I may still have a few of them.

Green peppers, onions, and mushrooms, sliced and sautéed. Cut a baquette into hoagie size pieces, toast in the broiler a bit for a bit of crispness, add the cheese and fixings and broil until cheese is well melted.

Chow down!

We do this with left over Christmas dinner roast beef during the holidays. (Although with three grown boys and yers truly, it sure ain't left over long.)

I probably mostly use chedder, as that is what I have around, usually. Would not use Velveeta or Cheez Whiz or those prepackaged in plastic individual slices. I like real cheese, though and should give some others a shot.

Had the Philly delicacies but I like our hometown cheese steaks!

When I worked in Philly always enjoyed Tony Luke's Pork sandwich!

Hey arik I'm in !! My preferred is with mushrooms and mozzarella not toasted. Problem is finding a "good" steak. I've been to them all and most are some grizzly *** meats. Pats and Geno's are for late nights after some beers and the yuppi,hipster wannabes.

I was back in the Midwest seeing family and went out to dinner in a small town. The waitress told me they had a special...Philly cheese steak with Swiss cheese. Told her I was from Philly and told her you would not find a place in Philly that would offer it with Swiss. John Kerry came to town and did that...and he lost his bid at prez. She asked what would happen if you asked for Swiss...told her they would stab you and then burn your house down...and then tell you to "have a nice day."

Only one of you got it correct! Philly cheese steak sandwiches are simple. Hoagie roll, shaved steak, onions, bell peppers and mushrooms and of course SWISS CHEESE! You can make it however you want, but it ain't a Philly cheese steak any other way. Bon appetite!

Default THE MAYOR IS "TECHNICALY" CORRECT

Calling it cheese would be a stretch. More like a 50 gallon drum with a pump, like that yellow mess at the gas-N- groans or fast food chains. If I have a choice provelone, no shrooms, some kind of chilli's/cayenne with the cooked onions. After living on squirrels & birds I couldn't identify in college, I AINT PICKY. They all taste good if hungry enough.

My usual cheeses are Swiss, Havarti and Muenster I've never had a Philly cheese steak and don't know which would go better on it, but like the idea of mushrooms.

Normally , I see cheese to be eaten as a snack or after dinner, with wine and fruit. The cheeses named go well with either red or white wines.

Many other jobs before graduating HS, but after turning 18 I worked at the local Armour cheese plant. Processed cheese is made up of moldy cutoffs, shipped in plastic-lined drums from who-knows-where, mixed with buckets of powdered chemicals, then ground into an amalgam that is heated to melting. The resultant glop is then converted into "cheese-like" bricks or individual slices for your enjoyment. I never knowingly ate another piece of the stuff after witnessing the process.

A good nutty Swiss or smoked provolone, sauteed onions, green peppers and mushrooms, and a good slathering of mayo for me on a Philly. I often make them with thinly sliced venison.

But I think that my favorite sandwich is a well made Cuban. There are also regional variations, as with the Philly.

Yes Philly has their cheese steaks, and they belong in Philly!
Here in PA Dutch Country we have our cheese steaks and they are served with "sauce" and onions!, sometimes maybe with mushrooms!

After hearing Joey Vento (when he was alive) say that he preferred Provolone (over whiz) on his cheese steak, I tried it, and is what I have on mine ever since then.

If you don't know who Joey was, he owned Geno's Steaks across the street from Pat's.

Rule3 looks to be enjoying a pizza steak, and I have to admit to having enjoyed one or two (or a hundred, or more!) of those............

Have never had a Philly in Philly.
Have had them in other places like Vegas.
Lots of East Coast people - food there.
Don't think I had them with Whiz.
Maybe Provolene.
Let's face it, Whiz is a pretty marginal food item!
It's not that I won't eat it, I just don't really want to.
If I went into a Deli in Vegas, ordered a sandwich and they brought me one with Whiz on it, well -

I'll take American cheese, fried onions, hot and sweet peppers. Even more important than the cheese a good cheesesteak needs a good roll. Many places use horrible mass produced spongy rolls. A good fresh roll from Liscio's, Conshocken Italian Bakery, etc is a must.

One of the best cheesesteaks I ever had was at a shop called Bocella's out in Delaware County back in the 90's. I was working construction jobs down that way with my Dad, we'd get lunch there every day. They also had great hoagies and meatball sandwiches.

Wow, 15 years ago that I was in Philly last. I used to like Jim's on South Street and their Pizza Steak. I guess marinara sauce and Muzz was on it. Whatever it is, has to have tomato gravy on it.
