Liquore alla Fragola is an Italian Strawberry Liqueur that can be made at home. My first attempt at it came out with a good strawberry flavor, just enough sweetness, but a little too strong (I estimate approximately 41% ABV or 82 proof) for what I think my wife would like. The next one will be a Crema alla Fragola (a creamy Liquore alla Fragola) that I think will be more to her liking. Here is my photo of my first attempt:

As a plus, the left over strawberries in the jar will go great over vanilla ice cream!

Recipe

Liquore alla Fragola (Italian Strawberry Liqueur)

Ingredients

450 grams Fresh Strawberries, cut
60 grams Sugar (I prefer Turbinado, but refined white is fine)
250 ml 190 proof (95 % abv) grain Alcohol
300 ml cold Water

Directions

1. Wash and dry the Strawberries.

2. Cut off green leaves, any white top, and any patches of mold from each strawberry. If needed, cut larger berries in half or quarters so all pieces are about the same size.

3. Alternate layers of strawberries and Sugar into a bowl. When finished layering, gently mix all together to evenly distribute.

4. Transfer strawberry/sugar mix to a freezer safe container if not already in one. Cover.

5. Place container into the freezer for at least twelve hours, or for up to three months.

6. Remove frozen strawberry/sugar mix and fully defrost. This defrosted mix may still be stored in the refrigerator for a few days.

7. Through a fine mesh strainer, strain the sweetened strawberry juice into a bowl, lightly pressing to extract a bit more juice (I use a silicon spatula).

After straining, the remaining strawberries may be transferred to another container, refrigerated for up to a few days, and used as an ice cream topping or for making a jam, etc...

8. Pour the Alcohol and Water into the juice. Stir or shake (covered) to mix. Cover.

9. Store refrigerated for at least three days to give the flavor time to develop and to soften the harshness of the alcohol.

Serve chilled. Enjoy!

Note: For every 100 g of strawberries above or below the original 450 g in this recipe, between 350 g and 650 g, adjust the amount of sugar by 10 g.

Yikes!

Be careful with that stuff! It’s not sold here in Michigan, but I’ve had a bottle stashed away for some time.

I finally broke into it when COVID first hit.
It makes a good hand sanitizer when you cut it with water! ;)

I have a bottle of Ever Clear I didn't know what I was going to do with it!
I have a very good idea now!

Thank you for freeing up space in the cabinet!
