Dinner last night was a bit of jump on St. Patrick's Day. I cooked Corned Beef and Cabbage and served it with an Irish Whisky, Mustard and Horseradish Cream Sauce.

Well, just threw the turnips, parsnips, rutabagas into the pot with the corned beef and carrots. Soon as it boils again will throw in the cabbage. Corned beef and cabbage makes a significant part of my frozen rations for 1/4 of the year. Delicious and freezes very well.

I’ve gotta say, those are 3 things that I definitely can do without! As a matter of fact, a number of years ago I had a buddy call me up and say he had gotten a great deal on a nice roast beef and wanted to know if I wanted to come over for a nice “pot roast”. I gladly accepted. When I arrived, the smell was fantastic. He handed me a large bowl and I opened the crockpot and served myself a large portion of tender roast beef, and hunks of carrots, potatoes, and onions. I sat down and dug in! The roast tasted as good as it smelled, and the carrots and onions were delicious too. When I stabbed a hunk of potato with my fork, I noticed something was odd. The consistency wasn’t quite right. I tasted it, and was surprised because it wasn’t a potato. It was a parsnip! I am not a fan. Maybe it was because he didn’t cook them properly, or maybe it was because I was expecting potato flavor, but even though I am someone that doesn’t leave food on my plate, I left the parsnips behind.

Corned beef and cabbage, YUM! Washed down with Guinness Stout and Bushmills Irish Whiskey. One of the best meals of the year.

Time of year for special diet after gorging on corned beef and cabbage. Up here only available before Easter. Black jelly beans. A whole bag of black jelly beans. Nutter Butters for desert.

After paying $9.95 for catfish fillets last week, this week danged store has “catfish nuggets” already breaded and seasoned for $2.99 lb. The nuggets are just small misc pieces. But OMG good!
I added an extra shake of Cajun seasoning. Between that the Iowa made Templeton Rye I’m feelin’ a bit too good!!

My wife's gone, need to eat. Oh look, leftover rotisserie chicken. Let's find something to go with it....

Frozen green beans, that'll work. Look for the microwave time and there's no microwave directions!!!! Just stove top. Wait. It says "Birds Eye Skillet". "Saute Ready"...whaaattt!!!!???

Whip out the electric skillet. OK what else can go with this...ah! a single red potato. Dice that up and get it going in some olive oil, diced garlic, salt, and pepper. Then dump in my "Saute Ready" frozen green beans. There's like a sauce in the bag that's a frozen puck. Eh, I can live with it. Cook it all up and toss in the chicken just to warm it up. Dinner time. Pairs well with the $4 Sauvignon Blanc I use for cooking.

Bonus points if you recognize the table.

Had a bottle of Boost while Mom was working her dinner. That held me for about 3 hours until I went to the fridge and pulled out a couple of my croissant rolls I usually use for breakfast sammiches. Added a slice of honey ham, smoked turkey and provolone to each and nuked them for about 30 seconds. Was very good.

Friday night imitation crab meat fried rice. Real Vietnamese fish sauce and some bottled oyster sauce as seasoning. A real one pan meal.

And cause am so good at following the rules, breakfast special. Garbage eggs with home fries, smoked hot Italian sausage, shrooms, onions and melted cheese.

And yes, a large portion of the diet comes from that same extremely well seasoned cast iron.

Darn, that looks good. It looks like something similar I made with cubed turkey slices and turkey pepperoni along with the mushrooms and melted cheese.

Dropped a 4.5 lb seasoned whole chicken into a crock pot atop quartered russets and onions for 6 hours on low. Evidently for too long as the instant read thermometer gave me 200F+. Drippings made for plenty of gravy for the dried out breast.
I'll try it again, even tho I covered the chicken inside and out it needed more seasonings and maybe breast down for next time.

Sorry but no pics. 4 of us went over to another couple’s house last night for some “ special soup” and the birthday get together for their disabled son. Lady is an Outstanding cook, period. All day slow cooked soup in a 2 1/2 gallon? pot containing frozen veggies, cut up carrots, sliced okra, chunks of potato, chunks of beef, sliced pork sausage and several other items no one asked about. Served with fresh sliced fresh baked Publix loaf bread and saltines. One 5”x 2 1/2” deep bowl was more than enough for most there. Couple other guys had 2 bowls and even ate some birthday cake. Planning on making some of my sausage gravy soon and have a breakfast get together. In reality it will be a brunch.

I was going to show you a picture of some spare ribs from the Traeger smoker
but I got carried away and for got to take a picture.

I tried to cut an hour off of the cooking time but this idea did not turn out,
since the meat was not as tender as it should have been.

Low and slow works,
as long as you give it enough time for the meat to break down.
I found out that increasing the heat and shorting the time with ribs, does not work out, at least for me.

The little lady is cooking Talapia tonight.
I don't think you can mess that up?
