Finally thought it was time to take the little lady out to eat and not have to mess with the dishes, tonight.
She has been working hard the last two days doing yard work and
she needed a little break from all her hard work.
Nothing fancy, just a drive down to the Olive Garden for their bottomless salad and two orders of eggplant Parm, with a bottle of Merlow, to help get it all down.
Sort of nice to get out, every now and then and get spoiled.

My favorite at the now defunct Don Pablo's was their "Mama's Skinny Plate"; three enchiladas (one chicken, one steak, one cheese) with ranchero sauce, Mexican rice, charro beans, refritos and tortillas. Skillet apple pie with ice cream and hot honey butter sauce for afters.
I miss it.

My mom made a lovely shepherds pie.
They served a version of it in my high school cafeteria once a week. Having never had prison food I can only imagine that's where they got the recipe from.

Deviled eggs are one of my weaknesses. We're talkin' Cool Hand Luke territory.

Took my father in-law out to the Local Mexican Restuarant for his 85th birthday. Margarita for the wash down for all of us .

Three chicken enchiladas with tomatillo sauce and LOTS of rice to pile over them. Got extra rice with the order because I pulled a half dozen spicy pork tamales out of the freezer and will be having them soon.

What's for dinner?
It rained all night,snowed this morning and it will rain until tomorrow! I’ve had a beef and vegetable stew simmering all day and fresh corns in the fridge. I’ll serve a nice Cabernet Sauvignon along with apple pie for dessert and toast little Charlotte tonight

The backstory; There was a very popular restaurant in Kenwood Towne Centre called "Funky's". They were famous for their Baked Potato Soup.
In the late 90's the mall raised the leases on all the tenants. Funky's said they wouldn't pay. They said they didn't need the restaurant as they had already started a successful catering company.
The last two weeks they were open they offered the soup recipe to all patrons.
We got in line.
Tonight's repast is thanks to Funky's.

Couple chicken tamales, couple cheese enchiladas, rice and a little guaca salsa. Yes, I ate too much. But, I did go and put in a two mile walk afterwards to aid in digestion.

Red Beans and Rice...No smoked pork neck bones so I boiled about a pound of Kielbasa for a bit then broiled it ...cut into slices mixed some in with RBR and kept some for eating with the RBR...On another note the fellow that runs cows on the ranch here brought us about 150 pounds of Hamburger, steak, a couple of roasts and more steak...Won't have to buy beef for a while. Let ya know how it is... If it's like a lor of local All natural organic grass fed beef I may need send some to somebody on the forum with sharp teeth

I had some leftover hash browns with plenty of onions cooked into it , so I added a couple eggs and scrambled it all together. One more egg would have made it perfect. Gonna have to remember that.

affectionately know as garbage eggs. Hash browns, onions, mushrooms and hot Italian sausage scrambled into eggs. And sharp cheddar cheese, forgot the cheese.

The last 4 tamales out of the half dozen I pulled from the freezer. Put Pace picante on them this time and of course had a bunch of rice. Mom did not finish her pears with fiesta blend cheese so I used that for dessert.
