I've been cooking again - Uova in Purgatorio
My brunch today, Uova in Purgatorio (Italian - Eggs in Purgatory). This is only the second time I've made it, and it is very tasty! 😁
Similar to Shakshuka. It is essentially, eggs poached in a tomato sauce.
Ya'll do anything similar?

I made this from scratch, right down to the sauce - olive oil, chopped onions, salt, garlic, tomato paste, chopped fresh tomatoes, salt and black pepper, cayenne, torn fresh basil, and simmer.

You should try “pasta puttanesca” (prostitute’s pasta).
Despite the name, it’s incredibly delicious. I recently made it and it’s just phenomenal.

I was short on the usual red pepper flakes that morning, so used a sprinkle of cayenne pepper to spice it a bit. I also had Aleppo pepper (middle eastern), which I think would have been a good choice.

I agree, I'm Roman, I live in Rome, I love eating and cooking as well as many other things.
It's one of the best recipes of Roman cuisine
La Pasta alla Puttanesca is one of my strong points, impossible to live without.
