They look like walnut, but I don't think they're factory. However, they are nice and any N frame stocks will fit any N frame model.

If you fill the hole with putty and then need to remove the stocks, the putty will either crumble or it will have glued the halves together, making the stocks difficult to remove. I'd take a hardwood dowel that fits snugly in the hole and glue it to one of the halves after carefully fitting it...
