#1, based upon your description, sounds like a pre-model 10, or Victory model. You may also hear it referred to as a "5 screw" model.
#2, again based upon your description, is a model 64. Check this out by opening the cylinder and looking at the frame for something saying "Mod 64" or such.
Both revolvers are built on what is known as the "K frame". In the S&W world, there are (smallest to largest) J-frames, K-frames, L-frames, N-frames, and great big X-frames.
I'm not trying to be harsh, okay? You are new to this, so let me help you out... The correct term for the "handles" as you called them is "grips" or "grip panels". Ex: "I removed the grips." or "I removed the grip panels".
To be even more correct, since we are dealing with S&W's, the more appropriate name is "stocks", even though we are not talking about a rifle or shotgun. I don't know why, but for years S&W called them stocks, instead of grips. No one will fault you for using the terms grips, grip panels, or stocks... "Handles" tells everyone you are a novice to the S&W revolver world.
I'm not sure what you want to know beyond this, as you didn't really specify.
