S&W 1926 .44 special hand ejector 3rd model
Can anyone tell me there was an option for Stag grips on this model?

Cool gun, you can imagine it riding in a sheriff's holster somewhere in the desert Southwest.
Anything is possible with S & W, but the stocks are almost certainly aftermarket additions.

Could get almost anything as "Special Order" but I think anything from S&W would have the medallions.

Stags
I don't think that there were anything other than special order guns factory supplied with stage. Never saw one lettered as such, but I have a significant number with stags from the 1920s-30s with them. They were popular. Here is a W&K 1926 with such.
And a 2nd Model with some really old stags.
