If it's a model marked 27 and has a square butt, post-war factory N frame stocks should fit fine.
What gun and what stocks are you talking about?

I bought a new model 27 a couple of years ago. Yes, it has the frame lock, but I am really happy to have it. A friend of mine has a pair of vintage model 27 grips that I would like to install, but I’m not sure they would fit.

My newer 27 currently has the target groups and is square butt. His are combat grips for square butt.

I have placed older real S&W Target Stocks on all of my N frames. TO ME: they fell and look better than Altamonts. Bob

I put a set of older target grips on my classic model 57. They fit and look great. Combat grips would look very nice on your model 27.

I put a set of late 70s football targets on my 29-10. I did need to do a bit of fitting. In my case the new frame was slightly thinner than my 27-2 and 29-2 frames. I sanded a small amount off of the backsides so they would fit flush.

As a rule yes. But grips aren’t exactly a precise fit.
