I would like to get them engraved with initials or something. Does anyone know where you can buy any M&P knives and get custom engraving? Or will I need to break out a dremel and try myself haha.

Ask around at local jewelry shops. They may be able to do it after you buy the stock knives. Or maybe if you have anywhere that does trophy's and plaques, they usually do Engraving on that stuff and could probably help out.
