Iron sight recommendations and where to get my slide milled for red dot?
I want to mill my slide so to install holosun 507K. I have a M&P Shield 9 that has a loaded chamber indicator (shown in attachment). Can you guys recommend to me a good place that does this slide milling? I live in SF Bay Area. I don't mind driving 50 miles to deliver and pick up the slide. I also don't mind mailing my slide to a good gunsmith that can mill the slide.
BTW right now I have factory iron sights for my gun. I want to upgrade to some glow in the dark iron sights. I was looking at trijicon iron sights. What would you guys recommend in terms of the coloring setup for the iron sights and dot for the holosun 507K? I heard for the holosun 507K there is a red dot and green dot option, and for the trijicon iron sights there are glow in the dark red dot, white dot, and green dot options. Which are the best color setup option for eye coordination, in your opinion? Thanks.

The fact you have the EZ model with the loaded chamber indicator makes it very very difficult to mount an optic.
Most custom shops will NOT mill the EZ because it means removing the LCI.
You may have to go with a dovetail mount, certainly not the most sleek or attractive but it will do the job.

DP Custom Works said they can mill my gun, but they would have to remove the LCI. How do I trade in my gun for a non-EZ version of my gun? Would removing the LCI affect the performance of the gun and cause it to maybe jam more?
I'm not sure, but maybe the LCI makes it California compliant?

So a few things. From the picture, it appears you do not have an EZ, you have a plain 'ol CA Compliant Shield 1.0. The EZ is not on the roster.
The "flag" on the top is technically called a Chamber Load Indicator (CLI)(actually called that in the regs). You also have a magazine disconnect.
"CA Complaint" (aka On Roster) applies to firearms sold from FFL inventory to non-exempt residents (OK, there are more exemptions/exceptions but will skip for now). The only semi-auto M&P currently on the roster is the 1.0 Shield (available in a rainbow of colors).
Once sold, there is no state law that requires you to keep these safety features. However, if you plan to conceal carry it, you should check with your local Issuing Authority (agency that granted you the license) regarding modifications to your CC weapon. Some allow, some don't. If not a carry weapon, have at it.
Next, you'll get a bunch of responses regarding criminal and civil liability for deleting a "safety" mechanism and overzealous DA's so be ready for them.
Finally, removing the CLI will not affect the performance. Many folks do it by replacing it with a low profile or no profile from Apex tactical. Some even buy new/used Shield slides.
In your case, milling your slide will still leave the roll pin hole for the CLI pivot, and will leave the gap in the breech where the CLI contacts the round. IMO, these are more aesthetic issues. There is a possibility some powder residue may cover the window after a good range session. I've not heard/read any complaints about this regarding the Shield, but I've not read any posts about milling the CA Compliant one. Perhaps one of our CA kin has done this before and can provide better input.

Saudade is right.
From a functional standpoint removing the CLI would in all likelihood have no affect.
From a legal stand point it COULD be an issue if something happened and you had an accidental discharge injuring someone or actually used your gun in self defense. Then the political environment comes into play, something I'm not going to comment on
On a side note did you contact DP Custom directly? Their webpage says they will NOT work on Shields with the CLI.
