Yes, it is important to practice with your weak hand. Very important. I recall back in school the firearms instructors told us stories of incidents where officers were hit in their strong hand during gunfights. We were required to show proficiency with our weak hand, unsupported.
We also shot from awkward/unusual positions as well (prone/prone looking up/back sitting/squatting)
We also were trained to reload our pistols one handed. Skills it is important to have - whether you are a cop or not.
You might try some IDPA matches in your area. While it is a game and not training, it is good gunhandling practice and FUN! Every match I've attended also had at least one stage where you were required to shoot weak hand only. Hope this helps! Regards 18DAI.
