Simple question, but not a simple answer. At home, I fry mine in bacon grease until the whites are cooked but the yolks are still runny. At a restaurant, I order "over medium", which to me means whites cooked, yolks runny, but some short order cooks don't seem to get it. Two out of five mornings, I either get over very easy, or over hard. Maybe I wouldn't be such a good cook if I was trying to keep up with eight orders at the same time.

So how do you like yours?

On somebody else's plate, preferably in another room, with no cross ventilation.

NOTHING can so reliably cause me to hurl as the aroma of cooked eggs.

I like sunny side but that wasn't an option.

And I still want the yolk to be very, very runny.:)

In restaurants I usually order over easy because sunny side often is cooked until the yolks are gummy.

And poached, runny yolks, are just wonderful.

Over medium for me. My yuppie sister orders them basted. You've never seen such a look from a waitress. Priceless.

I overheard a guy in a truckstop recently ordering his eggs poached. He had to explain to the waitress what that was. At least he didn't order them poached at Waffle House!

Over easy with ham & cheddar cheese grated on them, Then salsa poured over the whole thing, with some flour tortillas on the side. Huevos ala Mexicana, also known as Huevos Rancheros! Now that's good eating!:cool:

Cooked, I like em fried, scrambled, omlets even kiesch. I like the yokes hard or runny. We have 6 chickens and get 5 or 6 fresh eggs each morning. You can have those things you buy at the store.

2 large soft boiled eggs for 7 mintues 21 sec. medium heat, cooled in pan water and timed to the two slices of bread in the toaster for 3 min. 24 sec.:D

Hands down - Eggs Benedict! Here's a delicious example from the restaurant at the old Copper Queen Hotel in Bisbee, Arizona.

3-4 egg whites, one yolk broken in the middle, fried up in just a little oil (so yolk doesn't run), with avocado on the side. Salt, pepper, fresh garlic clove. Sometimes some basil as well.

I stick to one yolk since one yolk alone has 70% of your DV for cholesterol.
