I used to be so excited as a child, when the whole family would meet at grandma's house. She was the general from Naples Italy, and her American daughters were her troops, as the house filled with generations of hungry family.

Today, I'm the matriarch, as my sister and I now lead the dinner. It warms my heart like nothing else, to witness the good memories of family being passed down.

20 years ago I taught my eldest two grandchildren to make rice balls for Christmas Eve, when they were 5 and 6 years old. Now my two youngest grandchildren are making Christmas cookies, and they are 5 and six years old.

when you say rice balls, do you mean arancini? more cone shaped with meat and peas in the middle?
 
One of our family traditions on Christmas morning was to make ravioli for dinner.

My dad mixed and kneaded the dough while my mom prepared the filling.

My brother and I would roll out the dough into sheets using a Urania hand cranked pasta rolling machine.

Then my mom would spread the filling on one sheet and cover it with another sheet and my dad would use a press to form the dumplings.

My sisters then used a pastry cutter to separate the dumplings and put them on trays until it was time to cook them.

We were able to produce a lot of ravioli this way and it made our dinner really special.

My Sicilian daughter-in-law makes them with meat and peas.

Grandma's recipe cooked the rice in chicken broth, then mixes the cooked rice with ricotta and pecorino romano cheeses. Egg yolk helps hold the mix together in a ball and a chunk of mozzarella is pushed into the center. Bread and fry.
